Chinese Chicken Salad Tacos with Home made spiced tomato tortilla

Salads are great. My family likes their salads with a little protein, an extra crunch, and a fresh, sweet touch.  Having a salad once a day is definitely a good habit.  Of course, having someone chop and prep a salad is even better.  I am absolutely loving the ready to eat organic salad kits we find these days.  They’re so convenient, with such clean ingredients.  Here, I made a tortilla and topped it with the salad and some chicken.   It was a complete, delicious meal of Chinese Chicken Salad in a tomato tortilla.

I was glad to partner with FeedFeed and Earthboundfarm.  I am usually very skeptical about bagged salads and bottled dressings.  However, this one defied my expectations.  I stand by this brand., and am so impressed with this little kit.  It comes with a dressing (which by the way is good), some chips, and nuts.  I add this salad mix to my chow mein, omelettes, pastas, and pretty much everything else that I can add vegetables too.

I am one of those people who loves salads, although I do get lazy to get the right mix and chopping it. Thankfully, my kids love salads too.  Even the picky little one is a such a salad fan.  So, this kit is definitely super helpful.  I add some protein, some cheese, and it’s ready.

These tomato tortillas are so good with some chicken, the salad, and the dressing.  All you have to do is marinate the chicken, grill it, add the salad mix, and this meal comes together under 30 minutes.

While this recipe calls for the Asian Salad Kit, they also make Southwest and BBQ Ranch – both of which would make great substitutes!

Serves: 4-6
Ingredients
For the Chicken
  • 1 chicken breast
  • 1 tbsp fresh ginger grated
  • 4 garlic grated
  • 2 tbsp chili sauce
  • 1 tbsp brown sugar
  • 2 tbsp dark soy
  • ⅓ cup orange juice
  • 1 teaspoon sesame seeds
  • 2 tbsp olive oil
For the Tomato tortilla/roti
  • 2 cups whole wheat flour
  • 2 tbsp tomato paste
  • 1 tsp sesame seeds
  • ⅓ teaspoon toasted cumin powder
  • 1 teaspoon salt
  • 1 cup lukewarm water
To build the taco
  • tacos
  • orange segments
  • Earthbound Chinese salad kit
  • Peanut sauce(which comes in the kit)
  • cucumber slices
  • grilled chicken
  • peanuts
Instructions
  1. In a bowl, add the chicken and everything for the marination. Cover and refrigerate it for 2 hours or overnight.
  2. You can grill this, or pan fry it or bake it a 400 degree oven until is brown and cooked. Take it out and wrap it with an aluminium foil so the juices soak in and the chicken is moist.
  3. In another bowl, add everything for the tomato tortilla. Add water little at a time and mix it to make a semi soft dough. You can use a dough attachment of the food processor or the dough hook in a kitchenaid to make the dough. Once the dough comes together, knead it for 2-3 minutes until it is smooth. Wrap it and let the dough rest for 10-30 minutes before making the tortillas/rotis. Heat a griddle on medium flame. Divide the dough into equal portions, each has to be a small lime size. Roll it thinly and cook them on the griddle on both sides until they are blistered and cooked. Rub some butter on it to keep them moist. Wrap them in an aluminium foil or kitchen towel until you are ready to use.
  4. Take a taco, add few slices of chicken, the salad, some orange slices, cucumber and generous drizzle of the dressing.
  5. Serve warm.

I completely agree with you Asha that salads can be extremely time consuming to make. And as crazy as it sounds, salads are probably one of the foods that I tend to find myself craving the most; however, I don’t eat as many as I want because. . .well. . .ahem. . .see above. These kits are such a fantastic idea. And judging by your photos. . .they really are chock full of tons of fantastic ingredients. Perfect because I can have dinner ready for the Mr….but still bake 10 cakes in a day. 😉

It is crazy, but I hear ya..cravings for salads are legit, especially when we make all the crazy food. Thanks a bunch.
      Hahah.

I use this salad kit too! They have a second asian one (I think Chinese or something) too that’s really good. Love the way you plated it with extra color. I am always trying to avoid too much brown on my plate haha. That’s great that your kids love salad. It’s always hard getting some kids to eat more than just noodles and french fries sometimes. My nieces really love beets and avocado.

I loved all your pictures, as usual they are simply stunning! And this salad mix is amazing! I loved it too and we were using it for sandwiches as well.

Especially the first one showing the whole platter! Stunning! Great recipe that can come together in 30 min.
