Mini Matcha No-bake Cheesecake with berry swirl

This beautiful, luscious cheesecake is just sugary enough, just tangy enough and oh so easy.

Ingredients
  • Base:
  • 10-12 Chocolate Graham crackers or Oreo
  • 2 tablespoons of melted unsalted butter
  • pinch of salt
For the filling
  • 1 (8 ounce) package cream cheese(not the whipped kind)
  • 2 tablespoon lemon juice
  • 1 cup/8 ounce/250 ml heavy whipping cream
  • 3 tablespoon white sugar
  • ½ small tin/ 190 grams of sweetened condensed milk
  • 2 tsp Matcha powder, sifted
  • ⅓ teaspoon cardamom powder(optional)
  • Toffifay candy to garnish
Instructions
  1. Take a 8 inch pan and line it with parchment.
  2. In a food processer, add the chocolate crackers or oreos and pulse to crumble it. Add the melted butter and mix well. Take it out and put it in the prepared 8 inch pan and press well and refrigerate it for 30 minutes.
  3. In a mixing bowl, whip together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick and holds stiff peaks. Add the condensed milk and sugar, matcha powder, cardamom and continue to whip/beat until stiff. Turn off the machine, and mix once again with a spatula so that nothing is stuck to the bottom. Pour into chilled cookie crust, smooth it on top. Chill several hours or overnight. Just before serving, lift it off the pan with the help of the parchment paper, dust it lightly with Matcha powder and garnish with chocolate.
Notes
You can add any cookie you like. But chocolate works great with match flavor.
I've used condensed milk and sugar. You can omit the condensed milk completely and add ½ cup of sugar instead. I find the combo tastes very good.
If you use only condensed milk, it might not set well as compared to only sugar, but tastes utterly divine.
If you want it more sour, add more lemon juice. Or if you like it less sour, add less lemon juice
