RICOTTA COCOA WAFFLES – Whole grain with fruits

My week was quite an eventful one.

Have you ever silently scolded someone and a few moments later thanked them(in your mind)? 

We were in a small store which sells school uniforms. I finished my purchases and quickly decided to check my receipt with the number of clothes. Left my phone for 40 seconds on the counter. A minute later realized that I didn’t have my phone and I was standing exactly in the same place. IT WAS GONE…



I used the store to call my phone a few times.  Completely panicked and helpless. A good guy who was working in the counter kept trying my number as we intently listened if it rang somewhere close. No where, no where we could find it.
Heads down, disappointed, worried, angry and annoyed, we decided to get home and find a way to get the phone back. I  gave the good guy my home number and asked him to call me if he ever hears about it. My teen told me he has the ‘Find My iPhone’ app, and we decided to come home and try out our luck.

For 15 minutes I felt like my life was paused…gosh…have we given our phones that much control over us??  Well, walking out to our car,  a van with 4 women stopped and shouted out, ‘go check in the bathroom stall, we saw some phone..’, we did …and GUESS what?, we found it in a bathroom stall! OK, I have no clue how it went there or what happened in a minute…especially because we hadn’t gone to the bathroom, but was I glad, really glad. Got in the car all happy and promised myself to be more careful and completely forgot about the good guy in the store, and guess what, saw him running towards me.  He heard from one of the customers that we found the phone and he was so happy for us.  I apologized for not informing that I found it and felt so guilty. 

It was a bittersweet day and today is a bittersweet Sunday too. School starts tomorrow and we are celebrating with these RICOTTA COCOA WAFFLES.

This is one of those things I make almost every month and I have all good intentions to freeze some for the next week, never happens.  It’s that good. Simple, add everything to mix up and leave it for 30 minutes and make your waffles, comes out perfect every time. The batter can be mixed the previous night and made fresh in the morning. Very fancy, healthy and oh so yummy.

Cheers to a finding the phone, a sweet guy who cared, to the person who decided to leave my phone alone, cheers to a great week. Happy week my friends.But, before I sign off, have you every being so mad at someone but actually thanked them later? 

RICOTTA COCOA WAFFLES
Prep time- 10 mins
Cook time-  5 mins
Makes 12-15

Ingredients:

1/2 cup whole wheat flour
1/2 cup almond flour
1   cup rolled oats
1/2 cup brown sugar
1 overripe banana
1/2 cup of strawberries or raspberries
1 tbsp baking powder
1 tsp baking soda
2 tbsp cocoa powder
2 large eggs
1 cup part skim ricotta cheese
1/2 cup butter milk 
2 tbsp melted butter
1 tsp pure vanilla extract

Method:

1. Add ricotta cheese, butter milk, eggs,banana,strawberry in a blender and mix well.
2. Add oats and sugar and blend it well.
3. Pour in a bowl and mix in all other ingredients and make sure not to overmix.
You can leave it for 30 minutes to overnight to make the waffles.
4. Preheat waffle iron.  Spray the iron with non stick butter spray and pour one ladle of the mix and cook for 5 minutes or until it’s cooked. Serve HOT.
ENJOY!!

Note:
The batter is perfect made the previous night.  Mix it a bit when you make it the next day.
These waffles freeze really really well.
For FLUFFIER waffles, you could whip the egg whites separately and fold it in. 
I’ve doubled the recipe, that why I have 4 eggs and a lot more in the pictures.

    Wow beautiful waffles! I wish there’s a vegan ricotta, but I’ve made vegan waffles, but the sound of adding cocoa, rolled oats, almond flour, and whole wheat sound great! Sorry to hear about your phone situation, at least you’ve your phone! I can’t imagine losing my phone in the middle of unknown city… i.e., Spain, this is where i’m traveling right now for a month.

    Boy, do these waffles look good! I can see why they’re a family favorite. I have held out on a waffle maker (though we love waffles) so I settle for making pancakes. But I have a feeling I won’t be able to resist getting one soon.

    So glad your lost phone story had a happy ending. I know that sense of panic when something like your wallet (and now our phone!) goes missing. Everything’s on that phone! It’s nice to hear about the guy who cared… Have a great Sunday! Good luck with back to school too!

    Glad you found your cell phone.. wonder if the person who took it left in another place as hey could not open it using the code?

    My son loves waffles and I will try these for a weekend treat ( after the first week of school)

    Just a small thing I noticed: in the recipe, you have typed 1/2 cup whole wheat waffles, is it whole wheat flour?

    Those waffles look soo good. I’ve only eaten waffles outside, never made them at home. But now with my 2 year old – I think I need to start making them at home. I love the ricotto addition.
    Today,on a hike I dropped my phone too! And I never lose anything. I didnt even know I dropped it until someone found it and called out to us! I thanked her over and over and over and over again. Can’t imagine my life without my phone – sad but true!

    Glad you found the phone right on time Asha.. I can totally relate to your phone.. The same incident happened with me at a tailor’s shop in Chennai.. I kept it on the counter and removed the receipt and boom it was gone.. The tailor kept arguing that I had no phone when I came.. And stupid of me to have had kept the phone on silent mode.. He started creating a scene shouting on top of his voice.. I don’t know what gave me the strength suddenly and I called waved out to a traffic policeman standing in the corner.. And guess what.. The phone was in his trouser pocket… Waffles look beautiful Asha… And the bonus is the chocolate.. Loved it dear.. Hugsxx

    Glad that you found your phone. I know how depended are we on these gadgets these days? Even I forgot my phone today @ home and I feel little unsecure or uncomfortable at my work, even though the LAN phone is sitting in front of me :). The waffle looks awesome. I never tried with oats in the waffles. Since it freezes good, it a lifesaver for Moms like me. I am definitely going to try this. Thanks for the recipe Asha!!!

    I once, very carelessly, left my iPhone on a Gap checkout counter. The after walking out and fumbling through my purse, I raced back into the store and met with the cashier. They had my phone but I needed to proof it was mine 😀

    Hi Asha,

    Great pictures and looks pretty easy to prepare batter. Can you please let me know what type of waffle iron do you use? I am mostly a pancake person, never made waffles at home but always wanted to buy one…:) Now this recipe tempts me to get one asap as this batter can be prepared overnight. Will come very handy for the weekends and when the schools start next month! I did some research on Amazon and read some reviews but would like to hear from you as you’ve been using your waffle iron for a very long time! Thanks

      For the waffle iron, I used the two sectioned cuisinart one which I got from BedBath more than 15 years ago. It’s been good to me.

    I tend to panic anytime I can’t find my phone. I even have it right next to me as I sleep. I think they do have too much control over us sometimes!
    These waffles look so delicious. Anything with cocoa powder automatically gets my attention 🙂 Will try them soon, hopefully subbing whole wheat with gluten free flour will work too. Thanks, Asha!
