PEPPER SPICED PUMPKIN DINNER ROLLS

November 14, 2013 By Asha Shivakumar

 Pumpkin Spiced Dinner Rolls

  SPICED PEPPER PUMPKIN DINNER ROLLS-1

Do you watch cooking shows guys? Anything particular you like?
We are officially addicted to ‘Cutthroat Kitchen’.  Has anyone seen it? It’s Alton Brown hosting the show and I love him.
Can you imagine cooking with shears?, seriously, how do they even come up with concepts like that.  So many sabotages, curve balls and a lot of cash involved.

We were watching this particular show the other day and one of the chefs had to use tea lights to cook in one of the rounds. He kept a can on top of the candles and cooked pancakes on them, it was fun to watch.

Imagine baking something with no oven, ghoshhhh, that would be crazy. When we see these shows, we constantly think how we’d cook without something, or how did they cook in the very very early days without modern appliances.

I am so thankful for my oven and these fantastic and easy PUMPKIN ROLLS. Bread and carbs, I love you.:).
SPICED PEPPER PUMPKIN DINNER ROLLS

Here’s the fool proof dinner roll.  You could substitute bread flour with whole wheat flour, and any spice you want and it comes out perfect every time.  It is slightly chewy, bread like and has pepper running through the rolls, slightly spicy and oh so Good.  It was all gone even before we started dinner. Here goes….
PEPPER SPICED PUMPKIN DINNER ROLLS

Makes 8-10 dinner rolls
Time  2 hours

Ingredients:

2 cup Bread flour
1 packet active dry yeast or 2 tsp
1 tbsp sugar
1/2 tsp salt
1 tsp crushed pepper
1 tsp crushed cumin seeds
1/3 cup milk
2 tbsp unsalted butter
1/2 cup pumpkin puree
1 egg

Method:

1. Add the bread flour, yeast, sugar, salt, crushed pepper and cumin seeds in a standing mixer or a cuisinart and mix it a bit until everything is combined.
2. Warm the milk to 110 degrees, add butter and mix well.  Add the pumpkin puree and egg and mix everything well.
3. Pour the pumpkin mixture to the bread flour mixture and beat or mix at low speed for few minutes. Let it all come together.  The dough should not be too wet or dry.  DoNOT add any more flour, if it is too wet, you can add 1 to 2 tbsp of flour.
4.  Put in a oiled bowl and let it rise for an hour or until doubled in volume.
5. Make 10 equal portion and roll is into a ball and put it on a baking tray 2 inches apart.
Let rise again for another hour or until doubled in volume.
6. Preheat the oven to 375 degrees for 10 minutes.
7. Brush some melted butter and garnish with cilantro or any herb of your choice and bake for 15-17 minutes.
ENJOY!!

Note:
If you use wheat flour or any other flour, you might want to use 2-3 tbsp more.  The whole wheat flour is more a softer roll than a chewier one.
You could make this sweet by omitting the spices.

And I love cooking shows but have to admit competition/reality type shows are my least favorite.

I love watching cooking shows, especially Jamie Oliver, it’s pretty cool to veganize some of his recipes, too. I’m familiar with Alton Brown’s works, but haven’t watched the show yet. I love spiced dinner rolls – looks like a easy recipe to veganize with flax eggs & perhaps coconut milk? What a great way to use pumpkin puree, also I like the bread flour a lot, I use it alot in my steamed buns & baos.

I hardly watch any cooking shows anymore. I’m very disappointed in food network these days and the cooking channel isn’t any better.
Once in awhile there’s a good show on the public tv channels that I may watch, but I have no time really.

I do agree with many on cooking shows being very dramatic and lost the touch.
I remember watching some many many years ago, and it was fresh, learnt so much, but now it’s all about comeptitions. There are so many, its not even funny anymore. But entertaining nevertheless.
