Matcha No-bake Cheesecake bars flavored with cardamom

February 24, 2017 By Asha Shivakumar

This time it’s this beautiful, luscious, simply easy, smooth cheesecake with a hint of this naturally enhancing matcha and  a rich cardamom flavor hidden. Add the Toffifay, the caramel hazelnut chocolate treat to elevate the dessert.  One bite of this will make you want to stop and think of every little thing you have just experienced. Then you might not want to stop at one slice:)

For the love of chocolate, Matcha and all things pretty.

For me the end  of winter is all about open windows, fresh chilly air, full of grassy smell and leaves scattered everywhere. The mild heat from the fireplace spreading around, and snow on the mountain tops slowly melting away. Water dripping from the windowsill, a strong desire to wear a lacy dress and wander the vintage streets, camera in one hand to take pictures of the beautiful green mountains. A hope for something new, something fresh and something beautiful.

As I sit down with a mug of coffee to see the awards on television, I always wonder why the award season is in the brink of winter.  Wouldn’t it be just perfect on a hot summery day?, especially with those mid riff baring, backless clothes….:).

It is  the month of awarding arts and talent.  Few of us get together to watch the Oscars. We discuss movies, songs and of course the clothes.   Colors and glitters adorn everywhere.  It’s a pretty sight.

There’s always dessert to accompany our wine while our jaw drops at some impeccably dressed women/men, some amazing talent, the speeches, and the entertainers.

So it was just the perfect moment when Toffifay reached out if I wanted to do a post for Oscars.  I was just thrilled.  Well, it is one of my favorite candies.

Originally sold in Europe as Toffifee, Toffifay was first sold in the United States with this attractive wrapper around 1977.  The combination of caramel, chocolate and hazelnut feels just right. It feels classic. It is distinctive. Everything about it is decadent and chewy, with the delicate crunch of the hazelnut hidden inside. The chew-factor is just about right, too – it won’t pull out your fillings, but it’ll give you a minute to chew and ponder the awesomeness of its hazelnut essence. Divine and addictive.

Buy them  Here.  You can find these tiny beauties in many stores, like Target and Walmart .

This beautiful, luscious cheesecake is just sugary enough, just tangy enough and oh so easy.
Author: Ash
Serves: 16 squares
Ingredients
  • Base:
  • 10-12 Chocolate Graham crackers or Oreo
  • 2 tablespoons of melted unsalted butter
  • pinch of salt
For the filling
  • 1 (8 ounce) package cream cheese(not the whipped kind)
  • 2 tablespoon lemon juice
  • 1 cup/8 ounce/250 ml heavy whipping cream
  • 3 tablespoon white sugar
  • ½ small tin/ 190 grams of sweetened condensed milk
  • 2 tsp Matcha powder, sifted
  • ⅓ teaspoon cardamom powder(optional)
  • Toffifay candy to garnish
Instructions
  1. Take a 8 inch pan and line it with parchment.
  2. In a food processer, add the chocolate crackers or oreos and pulse to crumble it. Add the melted butter and mix well. Take it out and put it in the prepared 8 inch pan and press well and refrigerate it for 30 minutes.
  3. In a mixing bowl, whip together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick and holds stiff peaks. Add the condensed milk and sugar, matcha powder, cardamom and continue to whip/beat until stiff. Turn off the machine, and mix once again with a spatula so that nothing is stuck to the bottom. Pour into chilled cookie crust, smooth it on top. Chill several hours or overnight. Just before serving, lift it off the pan with the help of the parchment paper, dust it lightly with Matcha powder and garnish with chocolate.
Notes
You can add any cookie you like. But chocolate works great with match flavor.
I've used condensed milk and sugar. You can omit the condensed milk completely and add ½ cup of sugar instead. I find the combo tastes very good.
If you use only condensed milk, it might not set well as compared to only sugar, but tastes utterly divine.
If you want it more sour, add more lemon juice. Or if you like it less sour, add less lemon juice

Asha, I so love your description of the end of Winter – I don’t even own a lace dress but I wanna go buy one so I can roam the streets with it on and a camera in my hand and maybe one or 3 of these slices in the other? Ok, I know am being greedy, but I do so love the combo of matcha and chocolate – perfect as a dessert – so love what your did with Toffifee! And, TBH, I don’t think I’d care what was on TV if this was one my dessert plate. Delicious. I do so hope you and your family have a wonderful weekend.

Fantastic recipe Ash! We don’t watch the Oscars ourselves, but we will enjoy these beauties, that’s for sure!:):) The cardamom must make all the difference. And we do appreciate its flavor:)

Just tried the recipe, and the sour lemon flavour is stronger than the refreshing matcha and sweet taste! Is that the way it tastes for you too, or should I cut back on the lemon juice next time?

Since it is an cheesecake, it will be sour. If you like it less sour, cut down on the lemon juice.

You write really well Asha. Can you believe I haven’t even tried Matcha yet, it’s all over though. I saw some at Trader Joe’s, it’s time to pick it up and try it. I really hope this isn’t an acquired taste. Your pictures are stunning!!!
