Akki Rotti/ Rice-Dill Rotti (gluten free)

Thin, loaded with vegetables, and made with rice, Akki rotti /rice rotti is a very popular dish of Karnataka.  It is vegan, gluten free and oh so good, that you will be making this on repeat.

The food of Karnataka is very diverse, which has a wide range of vegan, vegetarian and gluten free recipes. Food there is typically less oily, and usage of multigrains is very popular.  While the strict vegetarian food of Udipi is just outstanding, the gourmet delicacies of Mangalore and their rich curries are a must try.

Having neighbors who made bisi-bele-baath from scratch, maddhur vada(a fried spicy snack) popular to the city of Maddhur, Kosumbari(raw lentil-cucumber salad, was  like a perfect tailor made situation.  I loved watching my neighbor grandma work her magic as she made these thin rice rottis.  There was a certain rhythm to her movements, as she flattened the dough on a thin griddle, while one was on the stove cooking.  She did it with such finesse while telling me about her day and asking me about mine.

After a grueling few months  working on a big project, I finally sat down to work on recipes that I want to share. This blog has always had a variety of food, just like how we eat at home. Most of the recipes what I share is something that I’ve cooked over a period of time or eaten over a while.  We celebrate our Sundays with a huge Chicken feast, and go on a mild cleanse with a green goddess smoothie on Mondays. While we crave ice cream and cakes at midnight, binge eat the whole loaf of bread, that I just got out of the oven, we also love our green salads.

These days there are many diets that people follow for various reasons.  Vegan diet being a very popular one now.  I know many of my friends are going gluten free, and I’m always asked for gluten free options.

So here’s one of my most favorite dishes that I learnt from my mom and a weekly staple at home.

A dish which is easy, just few additions to make it more flavorful and soft. Akki/rice roti does have a tendency to go hard, so the key is to add vegetables and not cook it too much.  Make sure to use fine rice flour, and try to keep all the vegetables very finely chopped.

A Karnataka speciality, uttery delicious. A crispy vegetable gluten free flat bread which is easy to make and very hearty.

Ingredients
  • 3 cups rice flour
  • 1 large onion, finely diced
  • 4 green chilies, finely chopped
  • 1 carrot, peeled and grated in the thin side of the grater
  • ½ cucumber, grated and squeeze, discard the juice
  • ½ cup dill,washed and finely chopped
  • 4 tbsp roasted peanuts, coarsely crushed
  • 2 tbsp white sesame seeds
  • 3 tablespoons cilantro, finely chopped
  • 2 tsp cumin seeds
  • 1 tbsp salt
  • 2 tbsp vegetable oil
  • 2 cups hot water, not boiling but hot( you might not need so much water)
  • Oil for cooking the rotti
Instructions
  1. In mixing bowl, add the rice flour, onion, green chilies, carrots, cucumber, dill, roasted peanuts, sesame seeds, cilantro, cumin seeds salt and mix everything well before adding the water.
  2. Add 2 tbsp of oil. Add ½ cup of water at a time. If the water is very hot to handle, use a wooden spoon to mix the dough. Mix everything well until the dough comes together. The dough will be sticky to the touch. It should all come together and not be dry. Make sure not to use all the water at once, you might not need all the water. Just use as much as you need to bring the batter together. Cover and let sit until ready to make it.
  3. Keep a griddle on medium heat. Let it get hot.
  4. Take a cotton cloth and wet it well. Sprinkle some water on the cloth, take a tennis ball size dough and pat it out with your fingers. You can make it as thin as possible, as you want.
  5. Using the edges of the cloth, carefully carry it over the griddle and slowly lower it on the griddle. Now, lift the cloth off the rotti. It will come off easily as you've used water. You could even use oil for flattening the dough out.
  6. Cook with a teaspoon of oil on both sides. It will cook in 2-3 minutes as we've used hot water to make the dough.
  7. Serve it immediately with some sugar or chutney of your choice.
Notes
Chopping the vegetables finely is key.
If you find you roti crack or dry, the dough might be dry, so add some more water.
As we use hot water to make the dough, you don't need to cook it for long. Cook it on medium heat and once you see it turn golden brown and crisp, it's done.

    Omg, so good!! I have got to make these!! I was out to dinner with some old friends last night. We were at an Indian restaurant and my friend started telling me how they had tried some of the best rotti from a food cart in San Fransico. They also said that they have a hard time making Indian food for whatever reason so I told them about you. You may have some Q’s coming your way. xO

    Awesome recipe. Few questions:
    1. Is it good as a tiffin option? I mean to say will it get hard and chewy when cold ?
    2. Rice flour in my part of the world has different varieties (Kerala- there is roasted rice powder for puttu, there is appam powder, etc. ). Did you use any specific rice powder? Or did you use home made rice powder?

      1. It is not a good tiffin option. If you read my notes, it is best eaten fresh and hot.
      2. Any flour is good. I used appam powder, smooth powder.
      HOme made flour is great option too.

    Beautiful post Ash! Never tried a roti like that before, they look amazing! Rice flour has only recently started being available here, and your recipe is a great way to try it out!:) Besides chutney, we bet these roti treats will taste amazing with a simple tomato-onion-cucumber-EVOO salad, right?:)
