Banana Bread needs no introduction. It’s cake like, easy and feels decadent and makes for a great treat.

One of my favorite recipe for Banana Bread uses ricotta and is decadent. Although I like the fancy, I make this simple basic banana bread version most of the time.

To make the very basic best banana bread that comes out super moist, it is important to start out with those ugly, overripe bananas!   They need to be a dark yellow with lots of browning.  The riper the bananas, the more moist your bread will be and the more banana flavor it will have!

HOW TO MAKE Basic BANANA BREAD:

This recipe makes one loaf of banana bread.  The first step is to preheat your oven and prepare a loaf pan some cooking spray or butter

  • Next, take a large bowl as seen below and whisk together your dry ingredients.  This will include the flour, baking powder, salt, and any spice you like or omit it.
  • Add your eggs,maple syrup and vanilla to your mashed banana mixer and use your fork to combine everything really well, until you no longer see any streaks of eggs.
  • Mix wet and dry with spatula just until combined.  Don’t overmix.
  • Now, you are ready to pour your batter into your prepared pan and bake!

Ingredients
  • 2 eggs
  • 1 large soft ripe banana
  • ¼ cup olive oil
  • ¼ cup maple syrup or ½ cup sugar or dark brown sugar(works best)
  • ½ cup whole milk or almond milk
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • ⅓ tsp salt
  • 1 tbsp vanilla extract
  • ½ cup chopped walnuts
  • ½ banana sliced to garnish
  • chocolate chips to top - optional
Instructions
  1. Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
  2. Add the bananas to a mixing bowl and mash with a fork.
  3. Add the vanilla extract and egg, oil , dark brown sugar,, milk to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
  4. In a second large bowl whisk together the flour, baking powder and salt.
  5. Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined. Dust the walnuts with some flour, mix it in the batter. REserve some for topping.
  6. Pour the batter into prepared loaf pan,top it with walnuts, press it well and bake for 40-45 minutes until a toothpick inserted in the center of the bread comes out clean.
