Every non vegetarian household in India has the special Sunday chicken curry , the everyday chicken curry and the Chicken curry we make for parties.  The difference in my opinion is the time it takes to cook the curry and the richness factor. What is common between all is the fresh ingredients used.

I went through a stage couple of decades ago when I researched about various cuisines of India  few countries too and wrote about them in my note book(which I still believe I’ll publish one day). I was so intrigued by local food of different countries.  I tried speaking  to friends from those regions, learnt how to make some authentic food(I tried). I could have a conversation about local cuisine to people and that felt good.  Don’t know what happened to that book or that enthusiasm.  I can go on and on about the various types of dishes  I’ve learnt, but I’ll bore you’ll next time.  Today it’s about the beautiful country, Nepal where Momos are a popular delicacy. Nawabi Daal Kheema/Chicken Mince with Legumes

Daal Kheema or chicken mince with legumes is a Nawabi rich dish which combines two unusual ingredients that work so well with each other. It’s delicious, perfect to entertain and will transport you to a Delhi Nawabi kitchen.

For hundreds of years, the Indian city of Lucknow has been famous for its opulent cuisine traditions, which are still practiced by a few chefs. Until the British arrived on the scene, Lucknow and the surrounding area were controlled by Nawabs. Incredibly wealthy, each Nawabi ruler had a team of chefs, who competed to create the most sumptuous meals. Theirs was a luxurious style of cooking — heavy on cream and oil, marinated meat and innumerable spices.

Thankfully a handful of recipes remain and the chefs have left some traditional and well loved recipes. When the Mughal empire crumbled the chefs and cooks were left to fend for themselves, they set up shop in the open market areas of Old Delhi and a love affair was sealed.

The Nawabi food is  exotic. It had to be unexpected.  Nawabi cuisine were riddle dishes. At one 19th-century feast, cooks used sugar, honey and other sweets to create an entire riddle meal. Desserts masqueraded as entrees like kebabs, curries and even whole fish. Even a simple, everyday dish would use, shall we say, instead of three or four spices, every day, it would change and would include 30 odd spices, condiments with flavoring agents. But what would always be essential there is an aromatic spice, which is dominant. … It is, again, like music.

Now, the Nawabi lifestyle is no more.

Our good friends mom comes from a royal family in Delhi. Their khandani Bawarchi(family chef) would make authentic nawabi food. She is passionate cook and a treasure cove of stories. Whenever she comes to visit her son in US, we are lucky to be invited to her place for dinner. I am very grateful to have eaten the amazing food. Even more thankful to have some recipes that she’s shared with me. This is the simplest of dishes I’ve learnt from her. Although, this recipe is a toned down version, easy ingredients, it does not lack in flavor. While it might not stand up to the chef or my aunt, it is extremely delicious.

Often in our culture, we don’t open the door to difficult conversations with our parents because the value of respecting our elders can be taken to mean never disagreeing with them openly. I had parents who were slighty above the average when it came to what I wore.   Piercings were considered ok, even a beauty for a women. I was nonplussed. Practically every female relative I had wore a nose ring, it was considered both aesthetically pleasing and an auspicious thing to do.

Last week a group of friends and I were discussing about how important it is to love ourselves,  to be content and how to be self aware. It’s not something that comes easily. It requires consistent practice and over time without your knowledge, you are there, you really do love yourself. Just like this dish, it might look easy, but it has a good balance of many ingredients to all come together. It is about balance, about understanding the different aspects to coming to the final destination that you want.

Mediterranean Fish with Olives

On our recent trip, we were invited to have lunch  at our family friend’s place in Cairo. The lady of the house was from Ronda, a small town in Spain and the husband is from Cairo. We got to taste a couple of Mediterranean dishes and traditional Egyptian dishes. How incredibly lucky are we?! The family was so kind to make vegetarian options for me and meat/fish dishes for the rest. Their hospitality was unmatched.

If there’s one thing I never miss during my travels, is, eating at local homes and this family being a family friend of ours worked out perfect. In a bit of delicious irony, the two of us ladies struck up a conversation when she was flavoring the fish. We quickly discovered a shared interest in cooking, world cuisine, and travel, and she graciously slowed down the process and shared exactly how to make her mom’s world famous baked fish. We swapped stories about how hard it was to find culturally authentic dining experiences when abroad.. She was enthusiastic about Indian food. All this with her husband being the mediator/translator. I did not feel sorry for him 🙂 . We got along fabulously.
