Traditional Moroccan dessert, Moroccan Guava Almond Phyllo Cake M’hanncha/snake cake is made with filo pastry and almond filling, scented with orange blossom water and cardamom. Here we’ve used guava paste and cream cheese for that nontraditional modern touch. M’hanncha means coiled snake, name given because of the shape. It is easy to make and the taste is simply divine!

This homemade pumpkin halwa icecream is so easy to whip up.  It’s packed full of ingredients you most likely have on hand already, and isn’t too ingredient-heavy.  Mix it with store bought ice cream, or make your own ice cream. Topped with crunchy brittle, it’s a surely winning dessert.

Badam Puri – Deep Fried Almond Saffron Crispy Crackers

A sweet, layered, crispy, deep-fried delicacy of Karnataka, badam puri is an absolute delight during festivals.  These badam puri/almond crackers, unlike the traditional ones, have badam/almonds in it and are sweetened with sugar.  They make great Diwali sweet gifts, all wrapped in cute boxes.

The prep for the big day of the year begins a week before the day.  There’s the shopping for the pooja, the lights are put up.  The home is cleaned; the baseboards, the fans, and every inch of the home are dusted and shown love.  Shopping for new clothes is such a fun experience. The streets are filled with happy people carrying at least three bags on each hand. The spirit of this festival can be seen in their eyes and in the streets….

A lot of the south Indian recipes are gluten free, the savory stuff and many desserts. When I do bake non Indian I usually stick to gluten, because that works well. In the past many months, every time I make BANANA BREAD  on insta stories, which  by the way is our favorite, I’ve  had so many messages to blog and show how to make gluten free banana bread.  Many times I’ve directed them to Alanna’s cookbook and blog.  She has some amazing gluten free options and great desserts.

Creamy Almond-Coconut milk Raspberry Popsicles

Creamy, delicious and simple.  These Almond coconut milk raspberry popsicles are not only beautiful, but also quite simple to whip up.  They freeze beautifully, and the agave nectar adds a subtle fruity flavor.  The chocolate, though optional, works so well with the raspberries.  A summer must make recipe.

Happy Summer!! Happy Popsicle Week!!

We are all big fans of popsicles, but can you believe that I had never made them at home until I was recipe testing for my book? The talented and lovely Alanna from The BOJON GOURMET shot the pictures for my book, and she is one talented woman.  While we were shooting, she asked me if I had popsicles in the book, and if not, she said I HAD to put it in.  And then, my obsession with popsicles started. On a side note, it was such a pleasure working with her.  I learnt so much in the process.  These pictures are definitely inspired by Alanna.

Even with all windows open, a blazing summer heat filled our home last week.  Waffles lays on the coolest floor next to the door panting for some fresh air.  There’s an almost lethargic feel to the air. Noon comes and we close the doors and curtains to relax with a cooling drink and books in each hand. All we’ve been craving for is some cold desserts that don’t mess your summer arms and salads….
