This simple, easy and quick chicken lo mein requires only a few ingredients and just fifteen minutes. You’ll have a good, nutritious meal in no time.
Hello there!!
And today, I guess a fifteen-minute chicken lo mein it is!
I’ve had a huge list of dishes I wanted to cook, shoot, and share. The fancy ones that don’t take time, but great for parties and to entertain, also amazing for family.
My teen loves to cook and eat, and while I was gone for a few weeks to India, he cooked quite a few dishes from the blog. He cooked the quick EGG CURRY, there was a huge pot of ZESTY AUTUMN SOUP, and there was this easy FISH CURRY. What is common with all of these dishes are: they’re easy, filled with flavor, and packed with nutrition. And the teen will be going off to college soon. He’ll fly to the other end of America, NY. Knowing him, he’ll need homemade Indian few times a week, and that’ll only be possible if he cooks it….
The BEST Indian style chicken nachos ever!!!! The thin crisp corn chips with the spicy chicken mince, its so so good. And it’s all in one single pan. MINIMAL CLEAN UP! YES!!!! Hit in all parties!!
I sit here, a fully shot and styled post staring at me and I am blank. I’ve made these Indian style nachos for years now, but how am I not finding the words to describe a dish that disappears in minutes of getting to the table.
It’s one of my best back-pocket meals, the chicken mince. One I can make on short notice, assuming that I can get my hands on the freshest mince from my butcher. It’s one of the things I get asked plenty of times:”can you share your Indian style nachos”. It’s one of those recipes that missed getting into my book MASALA AND MEATBALLS, it sure gave a tough fight with hush puppies:)….
This madras curry chicken salad avocado boats are so healthy and equally delicious, perfect with the cilantro cream. Just the right balance for the non-carb days or any day.
Curry is not a thing in Indian cuisine. Every recipe calls for a mix of spices, each family has their blend. So there’s nothing like curry, every recipe has it’s own name. There are many reasons for the word curry, you can read it HERE. Now, just for the convenience, we call it chicken curry or Andhra curry or Egg curry.…
I’ve always found this Andhra style hot & spicy chicken fry to be very flavorful, and a cozy dish for winters. Known for its sizzling items, full of flavor, Andhra cuisine is like none other. It’s so good.

Eating food has to be a lovely enjoyable experience, not a dreaded one….
Skillet Roasted Chicken Breast with sumac and lemon. It’s good, easy, healthy lunch or dinner and comes together so quickly.
This skillet roast chicken with sumac and lemons, I love to serve over some plain rice or coconut milk rice and it’s a nice meal in one. Add some grilled beans or asparagus and even better. The sumac itself has a very lemony undertone and the fresh lemon juice just adds to the flavor. Sumac in itself is not spicy, so I like to add a good dose of chili powder or cayenne pepper. We thoroughly enjoyed it.
I’m always on a quest for simple and easy meals that’s packed with flavor….
This creamy chicken chickpea cashew curry is a warm, easy dish that goes great with a bowl of hot piping steamed rice or with some flat bread.
The feeling of moving to a new country and adapting to it’s culture, the food, their uniqueness is strange and an interesting thing. It can be quite a lonely feeling in a room filled with people, it’s quite bittersweet at times too. You try to adapt, but you speak their language, it sounds different. You still inherit all the sounds, rhythm and feeling of the your own language, the pain and beauty of the language, too. Then you stop trying. Years later, find that you naturally have adapted. You search for your identity in the midst of all this diversity. You try to hold on to your roots like a baby that holds on her mom….
Garlic chicken stuffed inside dosa with a layer of egg and cheese. So good, a crowd pleaser and an easy lunch box treat.
Dosa is probably one of the top South Indian foods that’s loved by many. If you are garlic lover, you will love this chicken, if you like dosa and garlic, then this is the recipe for you. This Garlic Chicken Egg Cheese Dosa is a favorite of our home.
There’s probably as many dosa varieties as there are burger varieties. There’s the popular paper dosa, which practically is like a golden thin crispy paper roasted in ghee, masala dosa, uthappam, vegetable dosa, rava dosa-a favorite of mine, ragi dosa, neer dosa, wheat dosa and many more….
So happy to be partnering with Blue Moose of Boulder to bring this beautiful fall tart. This Fall Tart Grilled hummus chicken beet pear salad is a great light lunch or to entertain too. Crispy layered buttery puff pasty base, topped with chicken tossed in with hummus, feta cheese, beets and a light fresh salad.
Hi my friends!!!
Scrolling through Instagram, we slowly see warm hugs, apples, soups and fall colors. Autumnal chilly breeze is hitting us in the late hours and I am not complaining. It’s been quite a warm one in the Bay.
Quick entertaining ideas are something I’m always looking for and sharing on this blog. I am all for rustic easy dishes. This might be one of my top favorites using the trusty store bought puff pastry….
Juicy, moist, and flavorful. This grilled tomato chicken with herbed corn is made with tomato powder and other spices. It’s a perfect dish to entertain with.
Trying to settle back into the swing of things, a.k.a. the routine after a two and half month summer break, has been pretty crazy. I feel like I have a long list of things I need to take care of, but feel like a caged parrot, screaming his lungs out to no avail. Now, I’m getting back to work, and trying to get blog posts up. Testing recipes and shooting….
