Mediterranean Fish with Olives

This Baked Mediterranean fish with olives and capers is one of our absolute favorite baked white fish recipe. It’s cooked in a delicious tomato based sauce until tender and flaky. It’s a 30 minute dinner recipe you don’t want to miss! Serve with rice or a chunky sourdough bread to mop up the salty goodness.

On our recent trip, we were invited to have lunch  at our family friend’s place in Cairo. The lady of the house was from Ronda, a small town in Spain and the husband is from Cairo. We got to taste a couple of Mediterranean dishes and traditional Egyptian dishes. How incredibly lucky are we?! The family was so kind to make vegetarian options for me and meat/fish dishes for the rest. Their hospitality was unmatched.

If there’s one thing I never miss during my travels, is, eating at local homes and this family being a family friend of ours worked out perfect. In a bit of delicious irony, the two of us ladies struck up a conversation when she was flavoring the fish. We quickly discovered a shared interest in cooking, world cuisine, and travel, and she graciously slowed down the process and shared exactly how to make her mom’s world famous baked fish. We swapped stories about how hard it was to find culturally authentic dining experiences when abroad.. She was enthusiastic about Indian food. All this with her husband being the mediator/translator. I did not feel sorry for him 🙂 . We got along fabulously.

As the story of 2021 comes to an end, I see the lessons it brought me.

Surrender: No matter what big plans I make for my life, the plans of the Universe will always trump my own and they will always be better for me.

Daily practice is critical: maintaining my practices in the good times allowed them to show up for me in the tough times. Short and simple habits have been lifesavers.

Resetting myself to neutral through breathwork, reframing the negative narratives by looking for the growth opportunity instead of being stuck in victimhood and blame….

I love my eggs. Our family goes through eggs like there’s no tomorrow.

I like eggs. In fact, I like them quite a bit. In my kitchen or when dining out, if I have the option to add an egg to a dish, I will.

I love the act of holding the chilled eggs,  tapping it on the side of the skillet and listening to it instantly sizzle in a pan. It’s a morning ritual that wakes me up, centers me and prepares me for a new day. My zeal for eggs reaches far beyond the breakfast skillet, though. The egg blurs the boundaries between breakfast and lunch and confidently pushes its ways into dinner territory….

Udupi food, the food of Karnataka boasts of many types of saaru or rasam. Saaru is  thicker than traditional Chennai style rasam. It’s made with ground up masala and has a  notes of sweetness to it.

We were regular visitors to Dharmastala, a temple in Karnataka. Whenever I think of  that temple, I remember the food. What is very special about that temple is the free food for all that the temple provided. The most important to note was, it didn’t matter if you were poor or rich, everyone had to go to this one big hall, sit down on the floor, together and eat the meal in a banana leaf. That’s impressive, isn’t it?! To serves thousands of people free food(anna daana), and see no difference in any one, that’s how the world should be.

The food and that concept  astounded and impressed me then and it does now….

If you are a regular you know I am a huge fan of authentic regional recipes and this one is from  my family in Coimbatore. The food of Coimbatore has a rustic appeal to it. I am married into a wonderful family of great cooks. My mum in law has that magic touch and so does her sister, Vasantha chitthi. As a young bride I was so inquisitive about the food they prepared and wanted to learn everything, well at least as much as I could in the short week I stayed there. They were equally happy to share their secrets with me, and Vasantha chitthi was a darling to guide me. One of the first things I learnt was onion chutney, that was so tasty and so simple. Then they taught me how to make chutneys with vegetables that I shared with my mom and cousins back home. The base being the same. This kongunaadu Sutta kathrikka chutney or eggplant chutney is a recipe that’s passed on from my aunt-in-laws. My recipe repertoire has been enhanced, thanks to them.
