This easy and delicious beetroot vegetable biryani is my go-to on days when I feel like having a healthy biryani.  A one-pot meal of rice, vegetables, and aromatic spices, it’s rich in flavor and elaborate enough to take center stage at parties or just for the family.  Each bite is suffused with spice, veggies, or caramelized onions—deep and layered in flavor.

It always left me hungry and craving for my carbs.  Eating habits are something we grow up with and I did not grow up having salads, yes a cucumber salad with onions and tomatoes, if you can even call a salad.  That was the most adventurous I got.

As years went by, I really have come to love a good hearty salad.  Given a choice, salads are not something we gravitate towards, even on a healthy day.  Although not a huge fan of having salads on it’s own, I’ve found ways to incorporate and enjoy a good healthy green salad.  I may  have a wee bit of an obsession to add salads to everything.  I add it to stir fry, noodles, even my South Indian style potato fry….

Fruity Belgian Waffles/ Natural colored rainbow waffles

This is my favorite recipe of Belgian Waffles that I’ve been making for years, and they are a winner.  They are crazy simple, yeast free, and it comes together quickly.  It is adapted from tasteofhome.com, and added the fruits and matcha to make these Fruity Belgian Waffles.

We made colorful waffles for National Waffle Day.

Our bags packed and we are ready to get this thing going.  We drove four hours to this beautiful site with winding roads. We reached our destination and were able to stretch our legs a little.  Tall redwood trees, green and white tents, sounds of birds chirping invited us.  It was hot, but we felt cool under the shade of the tightly packed trees. The tall trees towering above called us in a way with their outstretched branches.  The warm sunlight streaming in was definitely inviting.  We parked our cars and decided to poke around some more.  Little did I know, I’d see the shadow of a bear that night…
