Add sugar and yeast to warm water in a large mixing bowl and let stand for 10 minutes. Let it bubble up.
Add All purpose flour, salt, butter to the yeast mixture. Add the dry spices except the nigella seeds.
The dough will start to be a little sticky, do not add more flour. Keep mixing and bringing everything together. Take it out on a surface and knead for 5 minutes.
Then put the dough in a oiled bowl, cover and keep in warm place for 2 hrs to rise.
After 2 hours, lightly punch the dough, divide to equal portions and form to any shape you want at this stage. Line it on a sheet pan 2 inches apart. Let rise again for atleast an hour or until it is doubled.
Brush the top with butter or milk, sprinkle some nigella seeds and Bake in a preheated 400 degree oven for about 20 minutes. Take it out and brush light with olive oil or butter.
SERVE warm with some coffee.
