Leeks and Spinach Triangles with Feta Sauce
 
 
Spanakopita Triangles filled with spinach and cheese is an excellent appetizer, takes your cocktail party from semi-homemade to gourmet.

Ingredients
  • 1 tbsp olive oil
  • Leeks - 1 stalk(sliced in the middle and thinly sliced, washed and drained)
  • Spinach or Spring mix - 2 large cups packed(chopped)
  • nutmeg
  • Salt and pepper
For the sauce
  • Yogurt
  • 2 tbsp full fat yogurt
  • ⅓ cup feta cheese
  • 2 garlic
  • 1 tbsp finely chopped mint
  • 2 tsp lemon juice
  • pepper
  • Phyllo dough
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat the olive oil in a large saucepan over medium heat.
  3. Slowly cook the leeks and stir until softened.
  4. Mix in spinach or spring mix.
  5. Cook approximately 10 minutes, or until most of the moisture has been absorbed.
  6. Remove from heat.
  7. Lay phyllo dough flat and brush with butter.
  8. Place a small amount of spinach mixture onto each piece of dough.
  9. Fold phyllo into triangles around the mixture.
  10. Brush with butter.
  11. Place filled phyllo dough triangles on a large baking sheet.
  12. Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.
Sauce
  1. In a blender or food processor add the ingredients for the sauce and pulse it.
  2. Serve it with the phyllo triangles.
