Leeks and Spinach Triangles with Feta Sauce

- 1 tbsp olive oil
- Leeks - 1 stalk(sliced in the middle and thinly sliced, washed and drained)
- Spinach or Spring mix - 2 large cups packed(chopped)
- nutmeg
- Salt and pepper
- Yogurt
- 2 tbsp full fat yogurt
- ⅓ cup feta cheese
- 2 garlic
- 1 tbsp finely chopped mint
- 2 tsp lemon juice
- pepper
- Phyllo dough
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large saucepan over medium heat.
- Slowly cook the leeks and stir until softened.
- Mix in spinach or spring mix.
- Cook approximately 10 minutes, or until most of the moisture has been absorbed.
- Remove from heat.
- Lay phyllo dough flat and brush with butter.
- Place a small amount of spinach mixture onto each piece of dough.
- Fold phyllo into triangles around the mixture.
- Brush with butter.
- Place filled phyllo dough triangles on a large baking sheet.
- Bake in the preheated oven 45 minutes to 1 hour, or until golden brown.
- In a blender or food processor add the ingredients for the sauce and pulse it.
- Serve it with the phyllo triangles.
