Fried Cauliflower and Potatoes in Peanut Sesame Curry

Ingredients
  • Cauliflower - 1 head cut into large pieces
  • Potatoes - 2 cut to 1 inch pieces
  • 3 tbsp oil +3 tbsp oil
  • ¼ cup peanuts
  • 3 tbsp white sesame seeds
  • ⅓ chopped onion
  • 1 tbsp ginger garlic or 1 inch ginger and 6 garlic
  • 1 tsp red chili powder or accordingly
  • ½ tsp toasted cumin/jeera powder
  • ½ tsp garam masala
Instructions
  1. In a pan, add oil and let it get hot. Add the cut cauliflower and potatoes in oil first till it is brown. Once it browns on all sides, take it out and set aside.
  2. In a blender, grind onion, peanuts, sesame seeds, ginger garlic, chili powder, cumin powder. Grind it to a smooth paste.
  3. In the same pan that the cauliflower and potatoes browned, add another 3 tbsp of oil, add the ground masala, garam masala, salt and fry on medium to low heat until the oil seperates from the masala for about 10 minutes. Toss in the browned cauli and potatoes, add ½ cup water and cover, simmer and cook for 10 minutes or until the veggies are cooked.
