In a large bowl, whip the butter and sugar for about a min or until creamy. Stir in the egg, food color, vanilla extract and mix until completely blended. Mix in the Flour, cocoa and salt. Make a dough.
Roll dough to any size balls you want. Placed it 2 inches apart on the baking sheet. Press a thumb or use a measuring spoon to make an indentation, be careful not to press all the way through.
Bake for 12 minutes. All to cool on a rack.
Melt the chocolate, let it cool, add the cream cheese, chopped cashews and mix well. Use a tsp of the frosting and top it in the indentation. Leave it to set for a while. Store in an airtight container.
