Marinated Gigantes/Greek Gigantes

Ingredients
  • 1 cup or 8 oz dried gigantes, soaked overnight and cooked or mixed beans( or 2 cans cooked beans,15 oz)
  • ⅓ cup good quality extra virgin olive oil
  • ⅓ cup calamata olives, very finely diced or processed
  • 4 garlic, very finely chopped
  • 1 shallot, finely diced
  • 3 tbsp chives
  • 2 tbsp minced mint,
  • 3 tbsp minced cilantro or parsley
  • 10 grape tomatoes, halved
  • 1 tsp hot pepper flakes
  • 1 tbsp chili oil
  • 1 tsp lemon juice
  • 2 tsp white wine vinegar
  • ⅓ tsp salt or as required
  • ½ cup feta chunks or crumbles
Instructions
  1. Take a large bowl that has a tight lid, add the beans, olive oil, olives, garlic, shallots, chives, mint,cilantro, pepper flakes, chili oil, vinegar and salt. Mix it well but gently. Stir in the feta cheese, tomatoes and pepper. Cover the bowl and let it marinate for a minimum of 3 hours of overnight. It will have the most flavor that way.
  2. Drizzle your favorite bread with olive oil – liberally! Heat a skillet over medium heat and add the bread to the skillet once hot. Toast until each side is golden brown and crunchy. Serve the beans on top of the toasts!
