White Bean Avocado Sandwich with Roasted Garlic and Sundried tomatoes

Ingredients
  • 1 can/15 oz cannelino beans
  • 3 ripe avocados - 2 to mash and 1 chopped
  • 1 whole roasted garlic
  • 1 cup Cilantro
  • 2 tbsp hot sauce ( I use sriracha and @truff)
  • dash salt
  • ¼ tsp pepper
  • 5 jalapenos ( use accordingly)
  • sundried tomatoes in oil
  • 2 tsp OIl for the sundried tomatoes
  • Juice of 1 large lemon
  • 2 tbsp Chives, finely chopped
  • Sourdough bread or whole grain bread
Instructions
  1. In a food processor, add the avocados, white beans, roasted garlic, cilantro, hot sauce, salt, pepper, jalapenos,sundried tomatoes, oil and lemon juice. Pulse and smash it. Try to keep it slightly chunky.
  2. Once that is done, take it out in a bowl, add the chives, the avocado you had chopped. This will add that chunky aspect to the mix.
  3. Use a good quality bread, top it with a good amount of the filling. Have it as a cold sandwhich.
