Plantain Tostadas with Apple Chutney

Ingredients
plantain tostada
  • 2 plantains
  • ½ tsp salt
  • 2 tbsp avocado oil
Apple Chutney
  • 2 apples
  • 3 tomatoes
  • 1 onion, chopped
  • 3 jalapenos, chopped
  • 2 tbsp brown sugar
  • 2 tsp aple cider vinegar
  • ½ tsp salt
To top
  • queso fresco
  • avocado
  • cilantro
  • Beans
Instructions
Plantain tostada
  1. Cut the plantains, boil it in water, salt for 10 minutes or until the knife goes through the plantains easily. Take it out, cool completely.
  2. Peel and put it in a food processor and pulse/run the machine until the plantains grind and form a dough ball. The dough will be sticky.
  3. Take it out on a surface. Use little oil and form balls. Use a tortilla press or a plate to flatten. Just make sure to use parchment or wax paper with little oil smeared to flatten it. Flatten all the dough out.
  4. Put it on a griddle and cook. Cook it on medium to low heat and cook. Take it out and serve.
Apple chutney
  1. In a sauce pan, add a tbsp of oil. Fry the onions. Once it is slightly brown, add the tomatoes and apple, jalapenos, brown sugar, vinegar and salt. Cook it on medium till everything is cooked. Try not to cook the apples down fully.
Assembly
  1. Top the tostada with chutney, queso fresco.
