Naan- Quick/Instant 20 minute naan

Ingredients
  • 2 cups Whole Wheat Flour
  • 2 cups All Purpose Flour
  • ¼ cup sour yogurt(unflavored and unsweetned)
  • 1 tbsp baking powder
  • 1 tsp salt
  • ⅓ tsp baking soda
  • ½ tsp nigella seeds
  • 4 garlic very finely chopped
  • 11/2 cup lukewarm water(a little bit more if required)
  • 1 tbsp butter
Instructions
  1. Mix yogurt, baking powder and ⅓ cup of water,set aside for a minute or two.
  2. In a large mixing bowl, add the flours, baking soda, salt. Add the yogurt mixture and all of the water. Make a semi soft dough. If you need more water, add a little at a time. It should not be very sticky or very hard at all. Cover with a damp towel and let rest for at least 10 minutes.
  3. Knead it for couple of minutes. Rest for another 2 minutes.
  4. Keep a non stick or a cast iron pan(which I prefer) and get it really hot.
  5. Take a tennis ball size of dough and roll using some loose flour. Roll approximately 10 inches or until it out not too thin or thick. Sprinkle some nigella seeds and some garlic, roll again so it gets stuck to the dough and doesn't fall of while cooking.
  6. Put the nan on the hot griddle and let it cook for 30-40 seconds. You will see few bubble on top, then turn the naan and cook the other side. It will take about 2-3 minutes to cook. Smear some butter on both sides and serve hot or wrap in a cloth and keep warm until ready to serve.
Notes
You can top with any topping and turn it into pizza.
I made a dry Pav Bhaji Masala made from cauliflower, potato, peas, carrots. Sauteed some onion, tomato, grated ginger and added pav bhaji masala. Cooked for a bit and added the mashed cooked vegetables. Keep the sabzi /vegetable dry. Top the cooked naan with vegetable mix, add some fresh mozzarella. Bake at 400-420 degrees for 5 minutes or until the tops are melted and gooey. Top with some fresh green onions.
