Vegetable-Tofu Wrap with Spicy Almond Cream

Ingredients
For the ALMOND-Sriracha CREAM
  • 1 cup Whole Almonds with skin
  • 2 garlic cloves
  • 1 tbsp smooth mustard
  • 2 tsp honey
  • 2 tsp chilli sauce(sambal or sriracha)
  • 1 tsp soy sauce
  • ½ cup water
For the WRAPS:
  • Spinach tortillas or any Tortilla of your choice
  • 2 green capsicum cut to 2 inch thin long pieces
  • 2 carrots cut to 2 inch thin strips
  • 1 yellow capsicum cut to 2 inch thin strips
  • ½ cup firm tofu( you could use paneer or halloumi too)
  • Pepper
  • Salt
  • Almond Cream
Instructions
For the Almond Spread:
  1. Soak the almonds in water for 2 hours or even over night.
  2. Drain the almonds. Add the almond in a blender along with everything for the spread/sauce. Add the water as required. It has to be spreadable. Grind it to a coarse paste or fine depending on how you like your spreads. Set aside.
WRAPS:
  1. Soak the tofu in some soy sauce overnight and the morning, drain it well with some paper towel. Cut to thin pieces and pan fry it with little oil.
  2. Saute the veggies with some pepper and salt until it is cooked partially. You can at this point cook it fully or keep it as raw as you want. Set aside.
ASSEMBLY:
  1. Warm the tortillas on a griddle until is pliable and you see some dark spots on them. Warm up everything and wrapped in some kitchen towel.
  2. Take one tortilla and Spread some Almond Cream. Add little tofu, vegetables and roll it up as tight as you can.
  3. Cut the rolls in thirds.
  4. To serve the rolls with some sauce, add some light coconut cream or water to the Almond cream with some pepper and salt to serve by the side.
Notes
You can cut the veggies and tofu the night before and just wrap the day of.
For a nut free option, you can just add Sriracha and Mayo with some mustard. It makes for a nice dip.
