Apple Cake Pancake with Candied Walnuts

Ingredients
  • 2 gala apples grated
  • 2 large eggs
  • 1 stick unsalted melted butter
  • ½ cup milk
  • 1 tbsp vanilla extract
  • 2 cups all purpose flour or 1½ cup all purpose and ½ cup almond flour/meal
  • ½ cup white cane sugar
  • ⅓ tsp salt
  • 1 tbsp baking powder
  • 1 tsp dried ginger powder
  • butter for the pan
Candied walnuts
Instructions
  1. In a large mixing bowl, add the grated apples, eggs, melted butter, milk and vanilla extract and mix everything until it is well combined.
  2. Add the white sugar, salt, baking powder,ginger powder and mix well. Last add the all purpose flour and mix without overbeating it. Let it rest for 15 minutes.
  3. Preheat a griddle to medium heat and butter the pan before pouring a large ladle full of batter. Coo2 it for 2 minutes and flip and cook for another 3 minutes. You can add some apple slices on top to decorate.
  4. Serve with candied walnuts, butter and/or maple syrup.
For the Candied Walnuts
  1. Heat a medium non-stick skillet over medium heat, add 1 cup walnuts, ¼ cup granulated sugar and 1 Tbsp butter.
  2. Heat over medium heat for 5 minutes, stirring frequently so your mixture doesn't burn (especially towards the end). Turn off the heat and drizzle a tsp of lemon juice to stop chrystalization.
  3. Serve on top of the pancake.
Notes
These can be made ahead and frozen for the week.
