Spicy Mango Chicken Wings

Chicken Wings drenched in sweet and spicy sauce. Perfect as an appetizer or main.

Ingredients
Rub for the chicken:
  • Chicken drummettes -8-10
  • 2 tbsp dark brown sugar
  • 1 tbsp paprika
  • 2 tsp salt or accordingly
  • 2 tbsp oil
For the Mango Barbecue sauce:
  • ⅓ cup vegetable oil
  • ½ tsp cumin seeds
  • ½ tsp fennel seeds
  • 1 small red onion finely diced
  • 2 tbsp minced ginger
  • 1 tsp garam masala
  • 4 Serrano pepper thinly sliced
  • 1½ cup mango puree(I used canned alphonso mango puree)
  • 4 tbsp lime juice(see how much acidity you would like, use accordingly)
  • 4 tbsp cider vinegar
  • 2 tbsp molasses
  • 2 tbsp Worcestershire sauce
  • 1-2 tsp salt or as per needed
Garnish with cilantro and chilies
Instructions
  1. Marinate the chicken with the rub for at least 2 hours.
  2. Preheat oven to 400 degrees or preheat the grill for 20 minutes.
  3. In a sauce pan, add oil and let it get little hot. Add the fennel, cumin, let it splutter and add the onion saute it till translucent.
  4. Add all the other ingredients for the sauce except for the lime juice and let it simmer for 15-20 minutes or until it is almost reduced to half it's original quantity. Turn off the heat and add the lime juice. Take out the sauce in another bowl and keep aside.
  5. Arrange the chicken on a baking tray and bake for 15 minutes or until it is browned. You could grill the chicken wings alternatively.
  6. Take out the chicken and add it in the pan in which the sauce was cooking and add 2 ladle full of the sauce. Cook the chicken in the sauce until completely dry. You can add more or less of the sauce. If you have more sauce, you can store for later use.
  7. Alternatively, you could grill the chicken ½ the way and baste it regularly with the mango barbecue sauce and cook fully.
  8. Serve with some cilantro and finely sliced chilies.
Notes
Note: I used Alphonso mango puree. You could use fresh sweet mangoes when in season.
