Quick Chocolate Matcha Mousse

An easy and quick summer treat that is great for entertaining or a pick me up on those warm summer afternoons. The chocolate matcha mousse is creamy, fluffy and oh so good.

Ingredients
  • 2 cups heavy whipping cream, chilled
  • 3 tbsp confectioners sugar
  • ½ cup semi sweet chocolate bark/chips or about 4 oz
  • 2 tbsp brewed coffee or 1 tbsp instant cof
  • 2 tsp kahlua
  • 1 tbsp matcha
  • ⅓ cup white chocolate
Instructions
  1. Freeze the bowl that you plan to whip the whipping cream in.
  2. Add the whipping cream in the bowl and using the whipping attachment, beat the cream. After it is lightly whipped, add the sugar and whip it to stiff peaks. Set aside until the chocolate is melted.
  3. Take two bowls and add semi sweet chocolate, brewed coffee and brewed coffee in one and the other bowl filled with white chocolate and matcha. Melt the semi sweet chocolate in a double boiler. You can use a microwave to melt the chocolate for 20 seconds at a time if you prefer.
  4. You want ¾ of the whipping cream for the semi sweet chocolate mousse and ¼ of the whipping cream for the matcha mixture.
  5. Add ¼ cup of whipping cream to the melted semi sweet chocolate and mix well. Once that's mixed well, add about 2 cups of whipping cream and fold well. Add the rest of the whipping cream to the match white chocolate mixture. Fold well.
  6. Add it to piping bags or you can spoon it in serving glasses.
  7. Pipe ¾ of the glass with chocolate mousse and a little of the matcha.
  8. Top with some chocolate wafers and serve.
