Hasselback Potato and Egg Salad with mustard and Scallions tadka

Ingredients
  • 10 -12 mini potatoes
  • 4 eggs, hardboiled
  • ½ tsp salt and pepper
  • 5-7 garlic, thinly sliced lengthwise
Tadka or the tempering
  • 2 tbsp olive oil
  • 1 tsp mustard seeds
  • 3 tsp finely chopped chives or 10-15 stalks chives
  • ⅓ tsp fennel seeds
  • 1 tsp cumin seeds
  • ⅓ tsp chili powder
  • 3 green chilies thinly sliced
  • ¼ tsp turmeric
  • ¼ tsp salt
Instructions
  1. Wash the potatoes very well and dry it out. Take a skewer and pierce it through the bottom of the potato(as shown in the pic), leaving about ¼ of an inch in the bottom. Thinly slice it till you hit the skewer. Carefully remove the skewer and add it to a baking tray.
  2. Preheat the oven to 425 degrees if you plan to bake it. You can cook them on a stove top too in a heavy bottomed cast iron pan.
  3. Arrange all the potatoes in the pan. Tuck in the thinly sliced garlic in the cuts of the hasselback potatoes. Sprinkle it with some salt and pepper. Try rubbing it inside the cuts without breaking the potatoes.
  4. In a small saute pan, add the olive oil. After it gets hot, add the mustard seeds, fennel seeds, cumin seeds, green chilies and chives. Keep the heat to medium. After 30 seconds, add the chili powder, turmeric and turn off the heat. Add salt and mix well.
  5. Drizzle this on the potatoes and pour it in the cuts of the potatoes. Bake for about 20 minutes until it is fully cooked.
  6. Take it out on a serving platter and add the eggs. Drizzle the remaining tempering on the potatoes.
  7. Garnish with some dill or cilantro.
Works great for picnics and potlucks.
