Pumpkin Halwa Swirled Vanilla Ice Cream with Saffron Sesame Crumble

This homemade pumpkin halwa ice cream is so easy to whip up, its packed full of ingredients you most likely have on hand already, and only calls for a few ingredients. Mix it with store bought ice cream or make your own ice cream. Top it with crunchy brittle, a sure winning dessert.

Ingredients
  • 2 cups pumpkin chopped and pureed or use ready made puree
  • 1 cup full fat milk
  • ¼ cup brown sugar
  • ½ tsp cardamom powder
  • pinch saffron
  • 3-4 tbsp condensed milk
Make your own vanilla icecream or use store bought
Sesame Almond Crunch
  • Sesame seeds ½ cup
  • Almond crushed - ½ cup
  • 1 cup sugar
  • cardamom powder - pinch
Instructions
  1. Method:
  2. In a thick bottomed pan on medium low simmer, add pumpkin puree, milk and let it cook for 5 minutes stirring continuosly. Reduce the heat and cook for 15 minutes.
  3. It should be thick, add both the sugar and brown sugar, condensed milik and mix and let it cook for another 10 minutes on low simmer.
  4. Turn off the heat and add the cardamom powder and saffron.
  5. Let cool in the refrigerator.
  6. Melt the icecream by putting it in the refrigerator. Put it in the refrigerator for 3 hours.
  7. After the icecream is set 50 percent, mix in the halwa, and freeze it overnight.
Sesame Almond Crunch
  1. Take a heavy bottomed pan or non stick pan, add the sugar and let it cook for 5 minutes or until a single thread consistency. Then add the sesame and crushed almonds. Mix it for another 5 minutes. Add cardamom and pour it on a baking tray which is buttered. Press it down well or roll it out. Cut it and let cool for few hours.
  2. Serve the ice cream with some crushed brittle
