Maple Rum Apple-Banana Pudding Cake

This simple delicious cake bakes so beautifully with a sauce that forms in the bottom. A quick dessert for potlucks and guests. Inspired by a recipe from Foodandwine.

Ingredients
  • 1 cup all purpose flour or ½ cup whole wheat flour+1/2 cup almond meal
  • 1 tbsp baking powder
  • pinch of salt
  • 6 tablespoons butter(I use butter) or ⅓ cup olive oil(to make it vegan)
  • 1 gala apple, grated
  • 1 banana mashed
  • ⅓ cup super fine white sugar
  • 1 large egg( omit to make it vegan)
  • 1 cup whole milk or light coconut milk(to keep it vegan)
  • ⅔ cup maple syrup
  • ⅓ cup packed dark brown sugar
  • 2 tsp rum
  • Pecans to garnish
  • thinly sliced apple to garnish
  • Banana to garnish
Instructions
  1. Butter a 9 inch dish well and set aside. Preheat oven to 375 degrees. If you are using a small table top oven, bake at 350 degrees.
  2. In a mixing bowl, add the all purpose flour, baking powder, salt and mix it well.
  3. Using a microwave, In a heat safe bowl, melt butter. Add the fine white sugar, apple, banana and egg. Mix very well. Add the milk. Mix.
  4. Pour the dry ingredients in the butter fruit mixture and mix. This will be slightly liquidy, don't worry. Pour this in the baking dish.
  5. In a bowl, add the maple syrup, dark brown sugar, rum and mix.
  6. Slowly pour the maple syrup mixture around the batter uniformly.
  7. Arrange some apples, bananas and sprinkle pecans.
  8. Bake in a 375 degree oven for about 40 minutes. Let it rest for 10 minutes before serving it.
  9. Serve warm with some ice cream.
