I love my eggs. Our family goes through eggs like there’s no tomorrow.

I like eggs. In fact, I like them quite a bit. In my kitchen or when dining out, if I have the option to add an egg to a dish, I will.

I love the act of holding the chilled eggs,  tapping it on the side of the skillet and listening to it instantly sizzle in a pan. It’s a morning ritual that wakes me up, centers me and prepares me for a new day. My zeal for eggs reaches far beyond the breakfast skillet, though. The egg blurs the boundaries between breakfast and lunch and confidently pushes its ways into dinner territory….

Back in the Eighties Indo-chinese was all the rage in India. Indian-Chinese cuisine originated in India and is a uniquely South Asian phenomenon, drastically different from the Cantonese Chinese cuisine available in the U.S. When Chinese settlers immigrated to a city, Kolkatta..they set up their own chinatown.

It all started with chicken manchurian which went viral, and it grew because of love of the merging of Chinese flavors with Indian heat. Dhaba Style Egg Omelette Tomato Curry

These mildly spiced eggs cooked in butter were rolled, cut, and simmered in a tangy garlicky tomato curry.  They are fluffy and soak in the juices quite efficiently.  This dhaba style egg curry is a perfect quick “lazy” meal for cold evenings.  The curry goes absolutely great with rotis, chapathis, and parathas.

Being a foodie has always made me think in one perspective, the sensual experience of eating is all in the head.  I’ve always felt garlic is a package of surprises.  You can use it in every possible innovative way, and there’s a new surprise each time.  Now let’s hold onto this thought for a while…

Our bags packed and we are ready to get this thing going.  We drove four hours to this beautiful site with winding roads. We reached our destination and were able to stretch our legs a little.  Tall redwood trees, green and white tents, sounds of birds chirping invited us.  It was hot, but we felt cool under the shade of the tightly packed trees. The tall trees towering above called us in a way with their outstretched branches.  The warm sunlight streaming in was definitely inviting.  We parked our cars and decided to poke around some more.  Little did I know, I’d see the shadow of a bear that night…
