Pumpkin Halwa Swirled Vanilla Ice Cream with Saffron Sesame Crumble

November 18, 2018 By Asha Shivakumar

This homemade pumpkin halwa icecream is so easy to whip up.  It’s packed full of ingredients you most likely have on hand already, and isn’t too ingredient-heavy.  Mix it with store bought ice cream, or make your own ice cream. Topped with crunchy brittle, it’s a surely winning dessert.

“As we express our gratitude, we must never forget that the highest appreciation is not to utter words, but to live by them.” – John Fitzgerald Kennedy

Before this week is over, many of us would have had a couple get-togethers with family or friends.

I have to admit: Thanksgiving is my favorite celebration among the many American traditions.  I find the meaning behind it intriguing, and I enjoy the holiday.  It’s about family, and being grateful and thankful for everything. And this Thanksgiving, I am more than thankful to be among my favorite people, my FAMILY. Words can’t explain how grateful and thankful I am for everything that’s happened to me….

Nevertheless, we are always ready to be lined up at an artisanal ice cream place.  If a sunny Sunday should occur, supreme patience is required for your favorite scoop at your favorite spot….

Every summer has a story, and it’s often bittersweet.

Around here, many moms are celebrating . . . and lamenting (just a tad bit) the last day of school arrived a couple of weeks ago.  Simultaneously relieved and a little bit terrified.  We’re finished with homework, packing lunches, carpool lines, teacher gifts, and end of year parties.  On one hand, it’s a huge relief.  But we’re looking down the barrel of twelve weeks of managing unusual schedules, creating fun activities, packing for road trips,  applying sunscreen, picking up wet swimsuits, cleaning up sand in the car, and trying to continue to contribute to the world in a meaningful way in the middle of it all.  Then there’s the never-ending pull of over-scheduling versus under-scheduling….

Creamy Peach Pistachio Horchata Popsicles – Gluten Free and Vegan

June 22, 2018 By Asha Shivakumar

Summertime means stone fruits, popsicles, and cool drinks. I combined the three in this Peach Horchata Popsicles.  A delicious peach jam and strawberry preserve swirled in the horchata mix make this a delicious treat.  You will not believe it’s not cream or milk based.

I consider myself skilled at multitasking. Like many working moms and women, I can get sucked in the Bermuda triangle of the regular routine chores.  I can be thinking of one thing, doing one thing, seeing something, and talking on the phone with someone, all at the same time.  I know it sounds complicated, but for some, we are wired that way.  For instance, I will be talking to my family about planning a vacation and my topic all of a sudden will shift to my little baby bear, as to why he didn’t finish his chores… :).  That’s how a mind of a multitasker works, I guess….

Easiest Delicious Kahlua Chocolate Matcha Mousse

June 2, 2018 By Asha Shivakumar

An easy and quick summer treat that is great for entertaining or a pick me up on those warm summer afternoons.  The chocolate matcha mousse is a no-bake, eggless dessert that’s creamy, fluffy and oh so good.

The windows are open, and a light breeze comes in moving around the papers left on the table.  A warm heat touches the side of my elbows.  Waffles finally has made his way to a corner of the garden where bougainvilleas are showering him with flowers and shade.  He digs a little spot for himself and sits cozily, tucked in for the next few hours, sun bathing.  I take my cold coffee outside, sit under the large red umbrella, and turn on my Etta James playlist with a book to scribble on.  Gazing into nothing and closing my eyes, I’m dreaming of the next couple of months….  I can feel it slowing down, as the holidays are approaching.  Ready to embrace the heat……

It’s summer here, and it’s monsoon season in India where I am right now.  Monsoon in Bangalore is beautiful.  The weather is quite perfect, not too cold or chilly.  It rains, but not crazily.  Being here, travelling around, and trying different foods is an amazing feeling.

There’s a huge selection of food here.  From the authentic Karnataka Ragi Roti (finger millet tortilla) to a Belgian waffle flavored with rich Indian spices, everything is easily accessible.

The palette right now is wide.  The ice cream flavors are numerous, with wine ice cream, cherry-mango ice cream, and butterscotch pistachio ice cream.  Throughout my childhood years, I don’t remember having fruit based ice creams or desserts at all.  It wasn’t that popular then. The ice cream that were fruit based were probably artificially flavored, so it was a natural instinct to go for the nutty cardamom or saffron ones, but a no churn pistachio icecream. It’s all so different now.

Although I do like the fruit ones, I still have a strong bond to the ones I grew up with. This is one of them., the no churn pistachio icecream.

Who wouldn’t like a luscious, smooth, sweet nutty ice cream?  We Indians have a strong relationship with cardamom.  The no churn was a popular method to make ice cream, since regular households didn’t have an ice cream machine then.  I stuck to that method with slight changes after seeing Nigella Lawson’s Popular No-Churn Ice Cream.

This is one of our favorite flavors and it works so well together.  I made cones using my recipe for Pizzelle.

The easiest no churn icecream is perfect for the summer days and these flavors are classic and delicious.
Author: Ash
Recipe type: Dessert
Serves: 10-12
Ingredients
  • 4 cup of Heavy Whipping Cream chilled
  • 1 can condensed milk
  • ⅓ cup coconut cream
  • ½ cup pistachio coarse paste
  • ½ tsp green cardamom powder or powder for 3-4 cardamom pods
  • Semi sweet melted chocolate
  • 2 tbsp coconut oil
  • Cones to serve in
Instructions
  1. Clean the whipping bowl and the whisk very well and dry it. You can leave the bowl in the freezer for 30 minutes before whipping the cream.
  2. Add the condensed milk, coconut cream and the chilled whipping cream and whip it on low speed, around 3 for 3 minutes so it can slowly whip. Then whip it on medium high for another 5 minutes at high speed until it is almost to a stiff peak stage. Stop the machine and add the pistachio paste and whip it for another 30 seconds to a minute until stiff peak and stop immediately. Pour in a ice cream pan or box and chill overnight.
  3. Melt the chocolate on double broiler, add coconut oil in it and drizzle on the icecream once it is completely chilled.
  4. Enjoy
