Back in the Eighties Indo-chinese was all the rage in India. Indian-Chinese cuisine originated in India and is a uniquely South Asian phenomenon, drastically different from the Cantonese Chinese cuisine available in the U.S. When Chinese settlers immigrated to a city, Kolkatta..they set up their own chinatown.

It all started with chicken manchurian which went viral, and it grew because of love of the merging of Chinese flavors with Indian heat. Then came the Vegetable Manchurian or Gobi (cauliflower) Manchurian, chili paneer, hakka noodles, idli chili and a ton more recipes that captured the hearts of Indians.  The common sauce among all is the Homemade Chili garlic sauce….

Korean spicy rice cakes, toppoki (Tteokbokki / Ddeokbokki,) is probably the most well-known Korean street snack in Korea. You can see mini vans or carts that sell it on the street very easily. Today I made easy Toppoki/Korean Rice Cake Stir Fry. There are many ways to make these spicy rice cakes, however today’s recipe is the most basic way of cooking it with minimalistic ingredients. So I am calling it “Easy Korean Spicy Rice Cakes!”.

While strolling the streets of San Francisco one day, we stepped into this hole in a wall place thinking we could have some ramen. What we were introduced was these korean rice cake smothered in sauce. We were addicted. Ordered a second serving and got to talk to the chef about how much I loved it. I was immediately reminded of something I grew up eating, called the  Ammani Kozhukkatai. In Southern part of India we make rice cakes in the form of small balls, they are stir fried with simple tempering and enjoyed with some chutney. And today, I guess a fifteen-minute chicken lo mein it is!

I’ve had a huge list of dishes I wanted to cook, shoot, and share.  The fancy ones that don’t take time, but great for parties and to entertain, also amazing for family.

My teen loves to cook and eat, and while I was gone for a few weeks to India, he cooked quite a few dishes from the blog.  He cooked the quick EGG CURRY, there was a huge pot of ZESTY AUTUMN SOUP, and there was this easy FISH CURRY. What is common with all of these dishes are: they’re easy, filled with flavor, and packed with nutrition.  And the teen will be going off to college soon.  He’ll fly to the other end of America, NY.  Knowing him, he’ll need homemade Indian few times a week, and that’ll only be possible if he cooks it….
