Corn Salad is one of our favorite summer light lunch! This easy Crispy Corn Chaat Salad features sweet fresh corn off the cob, crisp cucumbers, shaved sweet carrots, onions, crunchy peanuts with a delicious cucumber cilantro chutney that acts as a dressing.

Spicy Crispy Corn Chaat Salad is such a delicious summer salad staple; it’s easy to make and tastes incredibly good without many ingredients or fuss of deep frying the corn to get it crispy( thanks to the air fryer)!

Summer is the best time of year to serve up fresh salads and vegetables from the garden or local CSA. While I don’t have much of a green thumb, I have friends who do, and I get the corn, cucumbers and even carrots from their garden. Or your csa will be an amazing place to get the freshet of vegetables….

These refreshing Crunchy Kale Corn summer roll with cherries and miso-tahini dressing are a breeze on a hot day. The spicy almond crunch is the perfect touch to this salad roll.

Summer is in full swing here in the Bay. Not a beautiful warm air, but burning heat.

We spent our July 4th cleaning our backyard, making a little noise, and playing with Waffles. With the speaker on, playing some old blues, corn making some crackling sounds on the grill and these kale corn summer rolls are arranged neatly sitting on the table. I was drinking wine, and the rest drank lemonade from water glasses, sitting next to our little furball as he was panting as hard as he can. We had to physically calm him down. A lot of hugs and treats. The fireworks scare him, very badly. We put on some white noise at home, with our sprinklers turned on while trying to not leave his side.

With the rain and winds, the Bay Area is filled with pollen too. The only way I can communicate now, without messing my vocal chords completely, is to whisper. For some reason the husky and sexy voice(as someone called it) doesn’t seem to suit me and I’ve had a few people feel bad, laugh and make fun of me all at the same time :). It’s one of the worst sore throats I have ever had, and I refuse to go to the doctor. Trying to have green tea with honey, fresh turmeric and everything to soothe my poor little throat. I am so very thankful and grateful to Rakhee from boxofspice to fill my space today with one of her impressive salads.

As Rakhee puts it, we’ve known each other for the longest. I fell in love with her gorgeous photography and this post in particular Chaat Salad, and now we are great friends and I am in love with her personality too. She’s all ears when I want to and makes me feel like a million bucks (what more can anyone ask).
