This lychee mint lemonade is refreshing and delicious, a perfect drink on a warm day, with the unexpectedly delectable combination of lychee and mint.  Add vodka or any mix to amp up this drink.

Change is weird.

I’ve had this post as a draft for two years. The ticker at the footer reads 2,200 words. Oye. Every day for the past week I’ve tried to sit down and write about the change.  I know what to write: I want to write about the changes I’ve gone through in the last two years. Sometimes it comes when you least expect it. It is the unexpected where you learn the lessons that have the greatest impact on your life. I’m starting to understand the saying, “Life is a journey, not the destination.” Your life is defined by all the components that make up the journey.

I met up with a good friend last week.  She is a writer and is skilled at her craft, writing articles that catch your attention and don’t let go. She brought the subject up and mentioned how crazy exhausted I was exactly two years ago at this time.  I had just signed the book deal and was so overwhelmed. We had a chat about being vulnerable in terms of sharing, and how the concept of that word is being thrown around casually and carelessly. She said this, which I love: some secrets are worth keeping. Sometimes none of the words and thoughts and feelings we wrestle with need to see the light, and that’s okay. It takes guts to get vulnerable, i.e. share parts of ourselves that we fear will result in rejection. We have our loved ones for that. But guts for the sake of guts feels totally… unnecessary? It shows security, confidence to pump the brakes a bit and decide, on our own terms, how and when and for whom we’ll strip down for. 

It was a very bittersweet time when I signed the contract, the days of writing, testing, and shooting.  We are past that.  I am in a way better situation now.  I cannot believe some of the dark moments are behind us.  Like I used to love shooting dark, now I experiment.  I share what I love with all, and not worry much if it will be accepted or not.

I worry, sometimes, that the newer generation falsely associates vulnerability with sharing every moment tasted, every hurt suffered, every little nugget of wisdom that comes to us while washing our hair or taking out the trash. 

There is enough of that look-at-me-see-me-feel-my-heart-beat-but-don’t-actually-judge-me-or-tell-me-something-I-don’t-want-to-hear sort of thing on the internet and in the “real” world that we have to deal with. 

It’s okay to let some things just be our own to ponder and wrestle.

Instead! Life update:

It’s summer.  The teen has graduated, going to college soon.  I’m working on projects that give me immense happiness.  I’m training for my marathon after years.  Our little one is a teen now (you know how that goes:).  Waffles is two, settled well. Summer feels relaxing and good.

We are big fan of exotic fruit drinks, Mango Cardamom Fizz, Lychee Pineapple Lassi and Spiced Watermelon Juice. Lychee is widely popular in Asian countries and quite popular in India.  The season is around May- June.  They come in their shells, and I remember hating to peel and eat them.  Would always enjoy when someone would peel it for me. We rarely find whole lychees here, so I use the ones in the can and it is tasty.

This Lychee Mint Lemonade is a perfect mix of fruity sweetness, minty freshness with a sour lemon and limes.  Add a touch of bourbon to make bourbon lemonade or vodka for that kick.

Lychee Mint Lemonade

I love to make my lemonade with limes and lemons, it’s great together.  Adding mint freshens it up, and the lychees add to the fruity sweetness.  The spiked lemonade is a great way to entertain adults.  Add a shot of bourbon or vodka, whichever you prefer. Both go well with lemonade.

Muddle the mint with the with the lychees to extract the flavors and pour them in some ice, it’s the most refreshing drink on a hot summer day.

Refreshing, sweet and sour: this lychee mint lemonade is a perfect drink for summers It's got the sweetness from the lychees and mint acts are a freshener. Add a touch of vodka or any spirit you like to amp it up.

Serves: 6-8
Ingredients
  • 30 lychees peeled and pitted(or 1 can of lychee in it's syrup)
  • juice of 2 limes
  • juice of 4 lemons
  • 4 cups water
  • ¼ cup sugar
  • 2 sprigs of mint
  • Ice
  • 1 oz of bourbon per glass or vodka
Instructions
  1. In a mixing jar or bowl, add sugar, limes and lemon juice. Stir it is really incorporated and dissolved. Add the lychees and ⅓ cup of the lychee juice. Add couple of sprigs of mint to it. Mash with a muddler until the lychees are lightly soft and disintegrated.
  2. Serve with some ice and some mint and blackberries or any berry you prefer.
  3. If you plan on adding bourbon or vodka, add it after you pour the lemonade in the glass and stir.

    I am a huge lychee lover too….lemonades in summer reminds of books and music and vacations from college. How I love that!! Mixing in chunks of lovely lychees is a heady mix and a sure hit at parties.

    Girl your write up is way too good. I love it. Its bold yet humble enough to present your message. Yeah, so why do we bare for every one. First of all is some one so deeply interested to know? most importantly, there is a real me inside which knows, which agrees and ‘me’ loves ‘me’ unconditionally. This is the ultimate place where all remains settled. I think some of the most beautiful intimate experiences are best left inside to enjoy and to recall to revitalize ourselves. Sometimes displays are forgotten.

    “It’s okay to let some things just be our own to ponder and wrestle.” In a constant online social media culture, this is ever more important. I find the more I step away from it the better I feel spiritually, emotionally and physically. It’s just better for my spirit. And it gives me more time to make a lychee mint lemonade!
