This is super healthy soup that gives you all the fresh, warm fall flavors.  The spicy carrot soup is easy on the ingredients and boast big flavors.  Loaded with ginger and garlic, lime juice for punch, with some sesame seeds. It is tangy, nutty, very creamy and intensely flavored, Made with few ingredients and 30 minutes, this is an incredible easy and delicious meal any time of the year.

She’d slyly put a handful of millets in our pongal, or add some oat flour in the roti batter.  We never realized healthier ingredients went into our food, but it did. But, every moment dad and I saw her sneak it in, we’d roll our eyes.  Yeah… well, here I am living in the very world I lovingly mocked.

Who am I?  I can’t believe the day has come that I’ve become my mother. I’m making millets paratha, quinoa pongal, chocolate oatmeal…  And, I’m loving it. Dhaba Style Egg Omelette Tomato Curry

These mildly spiced eggs cooked in butter were rolled, cut, and simmered in a tangy garlicky tomato curry.  They are fluffy and soak in the juices quite efficiently.  This dhaba style egg curry is a perfect quick “lazy” meal for cold evenings.  The curry goes absolutely great with rotis, chapathis, and parathas.

I had ramen for the first time many years ago and wasn’t impressed.  Three years ago, however, when I had it in Totto Ramen, I was converted.  We enjoyed it so much that we had it a couple of times during that trip alone, which is quite uncommon for us.  After we got back, I was determined to find a good ramen in San Francisco.  Although I’ve found a few good places, it has never hit a spot like Totto.  Then, it was time to try it at home. Now, it’s more a habit, more than me wanting to sneak in vegetables in my kids.

I love the idea of an all-broccoli version of this, but I know not to test my luck too far, so for us, an equal amount of chopped broccoli to brown or white rice is the perfect compromise for the whole family. Just like cauliflower rice, you place the broccoli florets in the food processor and pulse until they resemble a rice-like texture. Be sure to watch is carefully because, if you process too far, then you’re on your way to pesto, but if you process it too little, then those indistinguishable grains of broccoli become chunks of green in your rice….
