Badam Anjeer Roll/ Fig Almond Burfi/Anjeer Burji/Anjeer Barfi

November 5, 2020 By Asha Shivakumar

Anjeer roll has many names: fig roll, anjer barfi or badam anjeer roll, it is a treat that’s pleasing to the eyes, deliciously moist, tender and nutty with a hint of rose, cardamom. And it can be made at home easily. This stuffed fig roll is naturally sweet from the figs and is refined sugar free. Perfect for a diwali platter or sweet gift box.

Diwali is the Festival of lights, family and lots of food!
It is one of the most popular festivals in India, if not the most. There are many stories linked to the reasons behind the celebration. Growing up, Diwali for me was all about new clothes, fun with family, food and FIRE CRACKERS(it was like the July 4th in India).

Ladies would start making savory and sweets a week before the big day.  Snacks would be stored in big steel boxes.  Cleaning was a big part, painting the home, changing linens, it was all chaotic. Shopping for clothes was also so much fun.  The stores would be so crowded that we hardly had space to turn around.

We might not be celebrating how we did back then, but I love to make sweets and savory snacks and give it to friends.

sweet bonda -Vada in Coconut Milk

October 20, 2020 By Asha Shivakumar

Sweet Bonda- soft spongy Urad Dal Vada soaked in sweetened coconut milk. It’s a heirloom recipe of a very culturally rich small community of a district in Tanjore/Thanjavur. Perfect Navratri Sweet.

Sweet Bonda - Urad Vada in Coconut Milk (Tanjore special) #navratrisweets #indiandessertJump-to-Recipe

The memories of this sweet bonda traces back to when I was about 14-15 yrs. Back road drives, our yearly trips with aunts, uncles and cousins.

That year we visited Tanjore, South India. Tanjore is known for many things: It’s paintings, the very popular temples that were build during the Chola empire, and their hospitality. How can I forget the food?!  To this day, Thanjavur and it’s food has stuck with me. We stayed at my mom friend’s home. A traditional home with thatched roofs, inviting thinnai and beams that were intricately carved out of teak wood. There are not enough synonyms to describe how varied their food is and how very delicious it is.

Reaching Tanjore past midnight, we went straight to bed after a few minutes of obligatory talk….

We are still seeing high temps in the Bay Area, but that doesn’t stop me from going pumpkin frenzy. At least my home smells like Fall.

I’ve made a few batches of these over the last many years. They’ve also made a few trips to the bake sale, and they get sold before you can spell PUMPKIN:’).

I don’t measure, I eye ball pretty much everything especially when muffins are concerned. And every single time I get lucky. Last week a friend of mine asked for the recipe and it hit me that I don’t use any recipe for this. So, I decided to write it down, send it to her and while we are on a roll, share it with you’ll. It’s after all one of my most baked muffins during pumpkin season.   Breakfast, lunchbox treat, after school snack… Best Ever Loaded Pumpkin Muffins for everyone!…

Sesame Apple CAke

September 28, 2020 By Asha Shivakumar

Thinly sliced sweet apples run through this tender, fluffy and buttery Sesame Apple Cake. This apple cake screams simplicity and comfort, a cake that is not overtly sweet and so so satisfying.

That abundance mentality vs scarcity mentality. We are human, we want it all. Recognition, success, respect, money – these are all things that most of us dream of having in abundance on a daily basis.

Steven Covey in his book Seven Habits of highly successful people coined this well.

_________”Most people are deeply scripted in what I call the Scarcity Mentality. They see life as having only so much, as though there were only one pie out there. And if someone were to get a big piece of the pie, it would mean less for everybody else.

The Scarcity Mentality is the zero-sum paradigm of life. People with a Scarcity Mentality have a very difficult time sharing recognition and credit, power or profit – even with those who help in the production. The also have a a very hard time being genuinely happy for the success of other people.

The Abundance Mentality, on the other hand, flow out of a deep inner sense of personal worth and security. It is the paradigm that there is plenty out there and enough to spare for everybody. It results in sharing of prestige, of recognition, of profits, of decision making. It opens possibilities, options, alternatives, and creativity.”_____

Adigas Sambhar/Karnataka Style Hotel Sambhar

September 20, 2020 By Asha Shivakumar

Idli-sambhar is an emotion. This Adigas or Karnataka style hotel sambhar is spicy and slightly sweetish just like how the people of Karnataka love. Simple spices, daal, are all boiled together, to form the perfect fiery red, hot watery sambhar, which  is perfect for  fluffy idlis and vada. It sure will make your day a great one.

Karnataka Style Hotel Sambhar #idlisambhar #sambharJump-to-Recipe

From joyful mornings, to painful waking moments to successful takeaway lessons / happy endings. To propitious experiences, and to new norms.

I land at 1.30 am, the security line is longer than I expected. I look around and see excited faces, emotions that are swelling to see their loved ones. Nervous and jittery hand movements and the phone rings. “Are you here, Ash?”, to which I excitedly scream “YESS”. I know two people are very eagerly waiting to see me, it’s almost been two years. In the blink of an eye — or it felt like that — I was done with security and at the carousel for the luggage. “URGHHH, why are my bags this delayed?” I ask myself, but I find myself surprisingly calm too. And there comes this brown baggage with a yellow tie that dad strung the last time I was in India, and oh, how I teased him when he tied that ugly looking thread. To that, he said: “At least it will stand out” ;). His face flashes in front of me. All the four bags come looking as eager for their owner as the owner itself….

This Peanut Butter  Chicken is such an impressive  meal, the kids loved! I say impressive because of how easy it is to put together and how flexible this recipe can be. Adding peanut butter to this recipe adds richness and a robust flavor. When a dish tastes like it’s been slow cooked or seems fancier than it is, I think it’s a winner. …

Modak/Kozhukkatai/Sweet dumplings with sesame and coconut

August 18, 2020 By Asha Shivakumar

Modak/Kozhukkatai, a sweet dumpling served on the auspicious day of the birth of Ganesha, the elephant GOD. It’s nutty, sweet and with a drizzle of ghee, it’s irresistible.

You are what you eat, so eat something sweet!

He sits majestically, adorned with flowers and a spread of Modak, laddos, corn, puffed rice and vada is abundantly piled on a silver platter and placed in front of him. The moment we dread, with tears: mom dad and myself have to bid him goodbye for a year. Dad does the aarti, and we take him to do visarjan( leave him in water}.  Sighs. It’s a sad few moments.

Morning starts off real early, 5.00 a.m to be exact. A bath and new clothes, a brass plate in hand, dad and I get ready to go bring Ganesha from commercial street. A place where my grandfather and his father got the custom made Lord that’s made out of a mould, and liberally sprinkled with gold dust….

Potato Paneer Stuffed Jalapeno Curry

July 29, 2020 By Asha Shivakumar

Paneer stuffed jalapeno Curry. The mild mellow, slightly sweetish tomato and cashew curry offsets the heat from the stuffed peppers. It’s dish to entertain with, a great vegetarian entree for those fancy days with a bodacious personality.

Paneer Stuffed Jalapeno Curry #stuffedjalapeno #curryJump-to-RecipeI run down the stairs to the door bell. The grocery guy has just pulled over the driveway. I wait till he leaves the produce and take all precautions to bring it in. A quick scan: milk, butter, 7 cucumbers(hmm I didn’t order that much, but I was ok), greek yogurt- check, a huge relief! I go to the next bag with my clear gloves on and stand confused. Four tomatoes and 3 pounds of jalapenos?!! What!!

After a few moments of annoyance and a close call for a massive tantrum, then the realization for the many possible things to come up with the three pound jalapeno bag were emotions all in a minute as I stared at the bag staring back at me….

Baked Chicken Chimichanga

July 26, 2020 By Asha Shivakumar

This baked chicken chimichanga recipe is a healthier & lighter version of the deep-fried one. They come together so quickly: just put it in a casserole dish, bake, and serve.  My boys love it and can’t get enough when I cook these.

Baked Chicken Chimichanga |#chimichanga |Jump-to-Recipe

Authentic Mexican food is vibrant, delicious, fresh, and fun. It is also colorful and spicy, using an amazing array of chillies, both fresh and dried. Many important ingredients are readily available everywhere, such as tomatoes, limes, coriander, red onion, avocado, and corn.

There’s a common perception that Mexican food is both spicy and heavy but, in fact, true Mexican food has both a depth of flavor – with its combination of savory and earthy flavors – and a lightness from its generous use of fresh herbs, vegetables and citrus. In most of Mexico it would be very unusual to put cheese in tacos, enchiladas, or tostadas, for example, and if it were used it would be a Mexican panela cheese (a smooth, fresh, white cheese). One of the dishes that’s considered heavy is the deep fried chimicanga….

Spicy Thai Basil Chicken

July 23, 2020 By Asha Shivakumar

Stir fries are fast, easy, and delicious. This Thai Basil Chicken will wow you! An incredibly flavorful recipe that truly tastes just like your favorite Thai restaurant take out, or even better.  Serve over some rice and a quick impressive meal is ready in no time.

Spicy Thai Basil Chicken #basilchicken #thaifoodJump-to-Recipe

We’ve eaten our share of bad Thai and great Thai food too. One of our favorites, if not the best is Khin Khao, a Michelin star Thai restaurant in San Francisco. Their flavors are subtle and not a single ingredient is overpowering. I definitely love their approach to recipes, and I was definitely inspired when I made the sauce for this Spicy Thai Basil Chicken.

There is so much nuance to Thai food, it’s not just food that’s as hot as it can be. Anyway, the Thai food that we have here is not Thai enough. It is, in fact, in complete adherence to the spirit of approachable Thai food. No doubt, the food is called Thai cuisine, and is cooked widely, especially if you take the common majority’s favorite ‘yellow or green Thai curry.’ But, is that authentic? No, but it’s relatable and palatable for all….
