Carribean style Shakshuka with beans and sweet fried plantains

Shakshuka is an easy and a healthy breakfast (or any time of day) recipe which comes from  Israel and other parts of the Middle East and North Africa. This Caribbean style shakshuka has fried plantains and a popular spice known in that region. Shakshuka is a simple combination of tomatoes, onions, garlic, spices and gently poached eggs. It’s nourishing, filling and one recipe I guarantee you’ll make time and again.

This coconut rice/coconut milk rice goes great with curries and a great side for any meal. Once you try easy coconut rice, you will see how quickly it will turn into the option of choice.

Coconut rice is one of those dishes that we eat a lot in a South Indian home.

Sunday lunches are very special.  Growing up a Sunday lunch always consisted of biryani, some sort of chicken curry and pepper chicken. But, there were “fast” days when meat was not cooked and it was a vegetarian feast.  Those days, it was Coconut milk rice, pakoda kurma, vada and some raita.  I sure loved those days.  I guess I was a vegetarian at heart growing up. But, I’ll never say no to biryani and any form of rice.

I’m in love with fresh flowers at home, big and small rings, my not so perfect black cotton dress, girls who carry themselves with ease that I covet, planners, writing small notes of love to family members, the diffuser that has lemon essence in it, sit and day dream.

This is aside from loving the people and pets around me.  This love is separate from family and friends.  This love sometimes steps to the back of my mind and I’m left feeling a little blaaaaaahhh…. until all the love comes rushing back and I remember that I’m totally in love with my life. Everyone loves a restaurant style curry, but homemade is something special, healthier and more flavorful. Karahi chicken is one of my go to dishes to order when I’m at an Indian restaurant. It’s even special  if you raid that spice cabinet and make everything from scratch.

It’s a popular north Indian dish that’s made with a few freshly ground whole spices and is known for it’s incredible flavor. Traditional Moroccan dessert, Moroccan Guava Almond Phyllo Cake M’hanncha/snake cake is made with filo pastry and almond filling, scented with orange blossom water and cardamom. Here we’ve used guava paste and cream cheese for that nontraditional modern touch. M’hanncha means coiled snake, name given because of the shape. It is easy to make and the taste is simply divine!

Thanksgiving is two weeks away!!

A few days ago, as I was talking to the boys, I asked them what they were thankful for.  The list went on.  What struck me most is when they said that we treated them as equals.  That made them feel special: when they could eat with the adults, sit at the same table, and participate in the same conversations and rituals.

Such a simple act of inclusion, a seat at the table. “An act of affirmation, really… You, yes you, young one, have a unique and important way of looking at the world.  There is so much to be grateful for during the holidays, but a seat at the table has been a gift I have always been acutely aware of, and very much thankful for,” he said….
