Everyday Chicken Curry/ Basic Chicken Curry #chickencurry

Jump-to-Recipe

Every non vegetarian household in India has the special Sunday chicken curry , the everyday chicken curry and the Chicken curry we make for parties.  The difference in my opinion is the time it takes to cook the curry and the richness factor. What is common between all is the fresh ingredients used.

Chicken Curry

Whether it be Sunday Spicy Chicken Curry or Weeknight Chicken Curry, what we Indians are proud of is the spices we use are freshly ground for the most part and no shortcuts.

Then you might ask, why is this called the Everyday Chicken Curry? To me an everyday / weeknight chicken curry has to be quick and simple, which is exactly this recipe. It’s simple. What makes it flavorful is the spice powder. I make small batches of the powder and use it anytime I make chicken curry during weeknights….

Chicken Tagine with Chickpeas and Blueberries #chickentagine #chickentaginerecipes #morocconchickenJump-to-Recipe

There probably hundred chicken meals in the blog and it keeps on coming. This chicken tagine with vegetables and blueberries is a new favorite. Tagines are definitely flavor-dense but are not necessarily spicy or hot. The use of fruits such as apricots or dates and almonds are common, but blueberries are a unique touch that we love more than any dried fruit. Sometimes honey often adds a slight sweetness to an otherwise savory dish. The word “tagine” also refers to the traditional clay and ceramic pots in which the tagines are prepared. The tagines are perfect for people who like tender and juicy food since it seals in the moisture for even cooking. The best part is that the tagine can be used as the serving pot, so straight out of the stove to the dining table.…

As the story of 2021 comes to an end, I see the lessons it brought me.

Surrender: No matter what big plans I make for my life, the plans of the Universe will always trump my own and they will always be better for me.

Daily practice is critical: maintaining my practices in the good times allowed them to show up for me in the tough times. Short and simple habits have been lifesavers.

Resetting myself to neutral through breathwork, reframing the negative narratives by looking for the growth opportunity instead of being stuck in victimhood and blame….

Madras Kheema Curry

March 30, 2019 By Asha Shivakumar

Keema or Kheema Curry is a robust, peppery curry dish made with minced chicken or lamb cooked with earthy spices! It’s not the most well known dish, but to the people who’ve eaten this curry in Chennai know it’s worth. Serve this with dosa, idli or appam.  Enjoy a blissful meal.

Madras Kheema Curry |foodfashionparty| #kheema #chickencurryIf you’re like me and yearn to cook something different, hearty, homemade and comforting food with the thought of eating something to warm up your senses in any weather then this is just the excuse to stroke that indulgence.

Kheema is a traditional Indian dish made of spiced ground meat, usually combined with peas or potatoes. Usually made with chicken or lamb, however it’s also great with ground turkey or beef. This dish however is inspired by a recipe that was written in my diary twenty years ago.  It was called Madras Style Chicken Kurma that called for whole chicken….

Karahi Chicken- Kadai Chicken

January 23, 2019 By Asha Shivakumar

This flavorful karahi chicken uses fresh spices, tomatoes and slow cooked. The chicken is coated with the spices and tomato and makes for a very flavorful unique curry.  I am so happy to be sharing my recipe for the best karahi chicken.

Best Karahi Chicken |foodfashionparty| #karahichicken #indianchickencurry

Everyone loves a restaurant style curry, but homemade is something special, healthier and more flavorful. Karahi chicken is one of my go to dishes to order when I’m at an Indian restaurant. It’s even special  if you raid that spice cabinet and make everything from scratch.

When you eat out at an Indian restaurant, chances are that they’ll have Kadai/Karahi Chicken on the menu. It’s a popular north Indian dish that’s made with a few freshly ground whole spices and is known for it’s incredible flavor. It’s a simple, spicy dish and is traditionally made in a cast iron wok, but you can use a dutch oven or large saute pan instead….

South Indian Spicy Tomato Chicken Curry/Koduvai Chicken Varuval

August 4, 2018 By Asha Shivakumar

This family-style Indian chicken curry is loaded with heat and spices, and it’s authentic as it gets. The chili oil, the fresh spices, and the technique makes this is a very uniquely flavorful chicken curry.  This South Indian Style Spicy Tomato Chicken, aka Koduvai Chicken Varuval, is a must make.

South Indian Chicken Curry-Tomato Chicken/Koduvai Chicken Varuval |foodfashionparty| #indianfood #chickencurryIf there’s one thing my hubby often craves, it’s puri (boori) chicken.  He is from Tiruppur, and his mom’s family lived in a small place called Koduvai.  Till date, when he visits Coimbatore (where his parents live now), he makes sure to visit his mom’s old town.  I see a sense of pleasure as he describes the village.  Old roads, thatched roofs, verandas, kolam (a design drawn out of rice) in front of every home.  He visited his grandmum’s home where he went on vacations, got pampered by his aunts, fed endlessly by his grandmum and rode the cow to his heart’s content.  He’s the favorite grandson and nephew to all, I can see why….

Spicy Chicken Fry – Andhra style

December 7, 2017 By Asha Shivakumar

I’ve always found this Andhra style hot & spicy chicken fry to be very flavorful, and a cozy dish for winters.  Known for its sizzling items, full of flavor, Andhra cuisine is like none other.  It’s so good.

Spicy Chicken Fry - Andhra style |foodfashionparty| #chickenfry #indianfoodSome of the hottest and spiciest food from South India, they say, is from Andhra Pradesh.  I personally haven’t had any spicy food that I can’t handle, but for most, this would be pretty spicy, but not quite unbearable. Chicken Fry is a staple in many homes, and everyone has their favorites.  Mine has to be my mom’s style pepper chicken, which is my little one’s favorite too.  This Spicy Chicken fry is inspired by the cuisine of Andhra, and quickly, our pepper chicken had some competition.

Easy and Delicious Chicken Chickpea Cashew Curry |foodfashionparty| #chickencurry #indianfood

The feeling of moving to a new country and adapting to it’s culture, the food, their uniqueness is strange and an interesting thing. It can be quite a lonely feeling in a room filled with people, it’s quite bittersweet at times too. You try to adapt, but you speak their language,  it sounds different.  You still inherit all the sounds, rhythm and feeling of the your own language, the pain and beauty of the language, too. Then you stop trying. Years later, find that you naturally have adapted. You search for your identity in the midst of all this diversity. You try to hold on to your roots like a baby that holds on her mom….
