Baked Chicken Chimichanga

This baked chicken chimichanga recipe is a healthier & lighter version of the deep-fried one. They come together so quickly: just put it in a casserole dish, bake, and serve.  My boys love it and can’t get enough when I cook these.

Authentic Mexican food is vibrant, delicious, fresh, and fun. It is also colorful and spicy, using an amazing array of chillies, both fresh and dried. Many important ingredients are readily available everywhere, such as tomatoes, limes, coriander, red onion, avocado, and corn.

There’s a common perception that Mexican food is both spicy and heavy but, in fact, true Mexican food has both a depth of flavor – with its combination of savory and earthy flavors – and a lightness from its generous use of fresh herbs, vegetables and citrus. In most of Mexico it would be very unusual to put cheese in tacos, enchiladas, or tostadas, for example, and if it were used it would be a Mexican panela cheese (a smooth, fresh, white cheese). Amazing vegetarian enchiladas stuffed with black beans, squash, corn and  topped with red sauce and cheese. My favorite vegetable enchilada recipe and it’s my shortcut method that is a winner of a meal.

For this recipe, I used yellow squash, corn and garlic. I also mixed in black beans for protein and jalapeño, cilantro, and spices for flavor.  I am forever looking for short cut methods and veggie options for weeknight dinners that can satisfy my carnivore loving little bear.  This fits the bill. My love of tofu continues.  I absolutely enjoy some spicy crispy tofu tacos drenched in sauce.  Tell me, what’s your favorite way to enjoy tofu?

As we get into the second week of 2018, I get even more excited.  My cookbook, MASALA AND MEATBALLS, will be out tomorrow.  And we all are so excited.  This is one of the recipes that was this close to getting in the book, but I had to edit it out, along with many other favorites.  However, when your meat-loving family says it tastes just like meat, I just knew I had to share it here….

The love of food the four of us shares is quite intense.

We all love to try different things, quite tough critics, and we might enjoy one more than the other.  We enjoy a good hearty Lamb chop meal as much as we enjoy a loaded salad with some dressing.

Trying to balance out the carnivore loving boys with a lighter fare which suits our taste is a challenge I take on happily and love.  I try not to fall into the routine of recipes and when variety is there, it makes it so much more fun.
